I think it's the fire. In GTA San Andreas the fire from flame throwers and Molotovs is the only weapon "ammo" the tank can't take. Aside from flipping and or falling i think, that's the only thing that can kill a tank. And fast. Fires from rockets don't usually last long enough to deal significant damage from a tank. All of this however is from GTA SA, I haven't played any later GTA's. :(

It was that the "tires" caught fire, the tank has "tires" not tracks in GTA V and when tires catch fire they do a lot of damage.

It gets damaged a lot more if you run over cars and stuff, if you just stay still its indestructable
