That strategy you were doing is called evasive/ragdoll cancell bait, very effective for heros that deal aton of damage and true combos, like Saitama and metal bat

This is much helpful than practicing a combo since you can fail miserably in a fight if you don't know how the keep the flow of the fight after failing a combo. Counter Baiting - there are many ways to do this, since im a saitama main, the way I bait a counter is by doing three m1s, consecutive punch, then normal punch behind you. This tricks players like garou mains into using their counter because the transition from consecutive punch to normal punch is enough for player to stand up and use counter which many player know so instead of normal punching them, use the ability then turn around.

on the dropkick one the other player can hit you since if they block they dont get stunned

Another tip if you fighting someone with a counter ability:dash but curve it to miss so they waste it
The best way to dash bait is by taking time right after the 3rd m1 and then m1, by that the dash baiting chances increase from 50% to 92%
I recommend switching play styles mid fight to throw them off like being aggressive into passive
