I make sopressata successfuuly every year, but i tried your capicola recipe and it came out perfect. I have a beverage frig and use that with a small USB humidifier for the sopressata and capicola.

Well Ivo...More than "Veneziano" quello e Milanese... 300 Million of people call that "MILANESA".
but we are Italians and we know the truth...(probably is Greek!!) LOL!
    Good job.

Interesting! Back in the late '80s outside the air base in Sicily I was at was a lunch time food cart "The Chicken Man". He served a grilled chicken panini that was unbelievable! I always thought it was a lemon flavor I was getting but, I think now it was vinegar?! I think I might give it a try, at the worst I ruin a chicken breast.

When you added the vinegar, I gasped! They looked SO good before the vinegar. I looked at the restaurant link you included and their menu said they use "wine" vinegar, not *white...? I'll have to try and see which one I prefer. Thank you

.. interesting....in the Netflix episode they used white vinegar but I think wine vinegar would be amazing as well👍👍

@@CookingwiththeCoias I thought it interesting also. Either way, I'm going to try both because of what you shared -- you haven't let me down yet, Ivo!
