    My father cooked a lot of ribs as I grew up in Northern Kentucky. He cooked them over direct fire, usually overcooking them. He sometimes used foil. But Dad cooked chicken quarters very well, those were always good. He didn't purchase a Weber until after I left home. One thing to remember is don't use spices that burn easily. Very glad to see this trend.

      Thanks so much! Low and slow is always better, but you can cook some good ribs fast if you know what you are doing.

    I asked you to make direct cooked ribs. Thanks for the video! Ribs looked GUUUD! Kinda more like a pork chop texture?

      That’s right, it was you…. Thanks for the suggestion! Yes, like a properly cooked chop. With the ribs, you need to get those temps up to the 195-205 degree mark so the meat and fat will break down and become tender. Low and slow does a better job of that, but it can be done fast too. It just has a different bite. It’s still good though.

      Yes it does. Got a half rack. Gonna do it hot and fast today. Gonna try an Asian bbq sauce

    Nice old school cook Ken! That little bit of char adds so much good flavor ! I love the color of these ribs !
