Because you are taking 30 degrees FROM zero. Zero is the maximum point which is y = 1, 360 is also the maxiumum point where y = 1, so these 2 are the symmetrical points of the graph, we are taking the 2 corresponding points, 0 and 270 does not align hence why we cannot work with 270 and 0, how ever if we were dealing with 90 and 270 we could add or subtract because those 2 points are symmetrical to each other
