Sili Labuyo is part of what is commonly called “bird peppers” across the world. They are ubiquitous in more tropical climes, and most often grow wild, not in gardens. They are called so because they are a favorite of many birds, who scatter the seeds across the ground as they poop them out. The seeds start with a little packet of natural fertilizer to give them a good beginning. That’s partially why they are so prolific. :-) They need about four more weeks of hot weather than what we have here in Chicago, so it's difficult to grow them. Just as the bush begins to kick in with peppers October is already here. During my first visit to the PI back in 1976 we had dinner at my wife’s auntie’s home. She had a plate of sili labuyo on the table. Joan told me they were really hot, but of course I felt I could handle anything - I was an American, after all. The first one went down easy and mild. So, I grabbed the second one and just chomped it down. It was so so so hot that it actually stopped my breathing. My lungs were saying to me, we don’t want that nonsense in us. It took about 60 seconds for them to kick in again. What she neglected to tell me was that any single bush could have a wide variety of hotness from pepper to pepper. Now I pop them down like jelly beans. When we were there two months ago her family always made sure there was a bowl on the table for dinner for me to eat. Good times.

I use labuyo to add on patis with kalamansi as dipping sauce. The green one I make dynamites with them. Cut the mid of green chili, add some sauteed ground pork and some cheese then wrap with lumpia wrapper then deep fry.
Thats the real spicy chilli unlike those other bloggers claimed when they do the challenge of Philippines spiciest chilli...have fun with that beast Mike
