Question, our monitor uses a different defibrillator pad where in the EKG leads are built into the pads. Can this set up be used to pace?

Whats the difference between fixed or demand

demand pacing paces only when the patient's intrinsic heartbeat is less than a specified threshold, while fixed paces at a set rate regardless of intrinsic activity.

The only you would want to put it in fixed mode is if you can't get electrical capture after you set it to the highest output.
