Sorry, if I made it sound like I paid $30 something a pound for the beef from my local farmer! I was referring to what it would have cost me to buy a beef tenderloin from Costco. I paid last year $4-ish for the hanging weight for half a beef for grass-fed grass-finished beef. When buying local meats the price can vary greatly in different parts of the country and based on what the farmer chooses to feed their animals. One of the awesome things about buying from a local farmer is you can ask them all those questions and know exactly what you are buying.
I am in Michigan and I purchased my beef from a local farmer this past spring and I paid 3.50 per pound for hanging weight and that was processed and delivered. I ordered another quarter that will be ready in January for the same price.
$14-20 lb in CT, wish I could find a more affordable source. I do understand farmers have to do what they have to do. Just wish I could afford it!

Becky, do you guys have a generator? You once mentioned that power outages are not an infrequent occurrence. We don’t have freezers, but since both of us work from home, we have a ton of computer equipment. A generator is something we’ve considered after a couple of outages at seriously inconvenient times. If you have one, can you talk about how you chose one & why?

Yes!! We just got an upright one .. we have a small garage. I do still want a chest freezer eventually.

It took my husband and I 6 or 7 years to get two freezers, we were very blessed and got them for free, but will likely be looking at purchasing another one in the next couple of years.
It took us 4ish years to purchase our 3 freezers. I cook twice a day every day and we don’t eat out often and no fast food at all, which is the only way I justified getting almost one a year. One for beef, one for chicken and pork and one for everything else. Honestly though, I have enjoyed canning quite a bit of meat recently for faster meal prep. I think that’s an economical solution and takes up less space for people who don’t have room for multiple freezers.
I’m 37 years old I been wanting a deep freeze for so long but never thought it would take me this long . I got one for Christmas I’m told my children I’m finally adult.
I just got mine at 47 😂

Freeze dried corn is amazing. And frees up tons of freezer space. You really need to try it. We store ours in 1/2 gallon Mason jars. Reconstitute quickly and tastes like just picked corn.
When I get huge carrots at the store, I use a Julienne peeler to make strips and freeze them in bundles so I can thaw them & throw them into Mongolian Beef or stir fry and it turns out beautifully!

When you get your steer ask for beef shanks or knuckles to make stock. It’s a game changer for soups and chilies.
Hi Becky. Your chest freezers are so organized. In regards to rendering your tallow, use your Nesco Roaster. My mother always did hers on the stove. But, I have done bear fat in the Neso, it is so much easier. Do it outside or in your garage due to the smell of rendering. Good luck with the rendering.

Omg when you opened up the fridge with the carrots i remember in the caribbean we make a carrot drink with fresh carrots and sweetened condensed milk. Evaporated milk and vanilla (essence) extract. Itsssss soooo good! If you have way more carrots that you know what to do with, you should try it out! ❤❤❤

Love these videos! As someone who is interested in having a from scratch pantry like yourself, I'm SO CURIOUS to know what you spend at the grocery store over a year. I imagine that your grocery bill should be lower since you're doing so much from scratch, but also understand that you like the use the highest quality ingredients!
As I make most meals from scratch, I find I can afford more organic items, I allow myself raw milk, organic butter, organic eggs, or friend/farm supplied eggs, and organic half n half. Other items I do occasionally… and I have started on local farm beef &chicken. Most other items are still conventional but I started off with what was most important to me. Start slow and only as your budget allows. That’s key. :) Happy cooking :)

I like your soft sided totes you use to organize your meats. I also have a freezer chest and I use milk crates to separate my food. Recently, I started using reuseable shopping bags because they are easier for me to lift out of the freezer.

Very interesting video, Becky. It is fascinating to see how you store everything, considering the large volume of cooking that you do.
I would never have a pork Loin or Tenderloin ground up. The loin turns into 3 or 4 different types of meals. The ends I'll use for carnitas and Bar-B-Q pulled pork. The middle I'll cut into boneless Pork Chops (they are so tender) and a roast. The Tenderloins will be butterflied and stuffed. So many options are possible with the loins and Tenderloins.

Oh i wish we had the space you have in the US. Here in UK i struggle with my fridge and freezer wich are both 5' high, which is bigger than most here but id live to have more freezer space to get stuff on sale or bulk to freeze. I feed my dog raw and this takes up a huge chunk of space!

Nice set up. I have had a stand up freezer for 20 years and it finally started to give out so Black Friday I ordered one from Costco and love it! It’s self defrosting and has that alarm as well. Nice job! Love all your videos! The beef tongue I make every Christmas morning for our kids I will tell you what I do in a second post. Lol

Carmelized onions are delicious!! I carmelize mine in the slow cooker and then dehydrate them. My favorite thing to dehydrate!

I love the totes in the freezer!!
We are building our garden space up. 3 years ago, was the first garden in literal decades. I was so happy.
We’ve planted fruit trees, berry bushes & plants…. And vegetables. We are finding ways to use as much space as possible.
We are also working towards more preservation. It’s a little tricky figuring out how much we need for a year.
My daughter and her 3 children moved in with me in 2020.
I appreciate you so much. I would be delighted to be a neighbor and friend.

Enjoying your content Becky! What a great idea to freeze the prewash spinach, I do chopped kale which is so convenient for soups, casseroles, stews, pasta etc., but never thought of spinach. Also love the apple pie filling - another great idea especially when produce is in season and on special. I'll have to check out your videos on how to process carrots for freezing and what do you do with the green peppers as I find they come out mushy after freezing.
I don't have a garden & no space for an extra freezer but I always take advantage of seasonal produce especially with great prices. Over the last couple of weeks, we were able to get full size carrots .84 for 3lbs which is an awesome price for our area, stocked up and love them steamed with broccoli.

For the beef tongue I take it out of the plastic and rinse off the blood. Then I place it in a crockpot on the stovetop since you have gas, you may want to put a cutting board under it. Then place the tongue inside the crockpot, and fill it with water until it covers the tongue. I them use a lot of garlic powder and pepper. You can use salt but I try not to use salt if I do not have to. And cook it over night for 8 hours or until tender. Every crockpot is different. In the morning I take it out into a cutting board with a dripped edge or a large bowl and I take off the skin off of the tip of the tongue. It’s thick so you can tell and bumpy. Then chop like you are making chopped pork. Serve with hot flour or corn tortillas, salsa, onions, tomato’s, cilantro and avocado, Yum!!! Serve hot, you can add a little of the hot juice from the crockpot to mix it so it’s not too dry if it is or when you store the rest. I freeze what’s left.
Make Green Chili Burros with the Brisket…so delicious!!! Slow cook in the oven for about 6 hours and pull it apart like you’re shredding it. The leaf lard should be saved and coveted for baking. It makes absolutely delicious pie crusts and pastries!

Beautiful veggie freezer! And the cheeeeeeeeese! I would recommend keeping your butter in a freezer bag to prevent your butter absorbing aromas and smelling/tasting like freezer. It helps a bunch! (You can keep reusing the bag, so no guilt)
I'm so excited to follow you! I am a mom of 2 busy with sports. My husband is a truck driver, so I do a lot of food prep throughout the week. I Cook his breakfast and dinner for the week. I usually do enough to get me through 2 weeks at a time. My daughter eats very healthy she is a wrestler, so I do a lot of meal prep for her lunches and dinners. My husband's parents have a beef farm so we always have beef and I'm a canner. I can't wait to see your videos. I try my best to grow all are foods and meats come from local. I dry my own herbs as well. I also make my dogs food and my daughter make their treats all homemade. Thanks for taking the time to share with others😁
I make my own sauerkraut and use it in a sauce with honey and Dijon mustard over roasted chicken and root veggies. It's very yummy.

Have you ever tried fermenting sauerkraut? Homemade tastes much better than store bought and it's so easy to do. I've done it with white and red cabbage before. We always make a big batch and it lasts ages in the fridge 👌🏼
