What a coincidence! I just made mushroom risotto yesterday. I learned from watching your videos a couple years ago and cook risotto at least twice a month. I like mine a bit loose and the cheese at the end is the best part.

I like leeks in risotto as well. One of the risotto’s I make has leeks, artichokes, chicken stock and verjuice, used as an accompaniment to meatballs or Osso Bucco.
I learned how to cook it by watching Lidia’s videos. It’s really not that hard to cook, but you do need to keep stirring it to keep it from sticking to the bottom of the skillet. Also, I start checking if the rice is done about 16 minutes into cooking.
@@tawnmacdonald3657 you can do it! Alao, from my experience, keep it at a gentle simmer because if it’s boiling too much the stock will evaporate before the rice can absorb it. You will see the rice plump up and thicken as it cooks.

No, it is actually easy to do, but it is a constant process, so you have to stay at the stove. Worth it! Delicious!
