Butterscotch Coconut Bourbon Blondies Recipe
INGREDIENTS
• 2 sticks butter, melted
• 2 cups (15.5 ounces) brown sugar
• 2 large eggs
• 2 teaspoons vanilla
• 1/2 cup bourbon/whiskey
• pinch salt
• 2 cups plus 2 tablespoons all-purpose flour
• 11 oz. butterscotch chips
• 3/4 cup sweetened coconut flakes
With a mixer, beat the melted butter and the brown sugar together. Add the eggs and beat. Add the vanilla and bourbon and beat until incorporated. Stir in the salt and the flour. Add the butterscotch chips and coconut flakes. Stir to combine.
Line a 13x9 pan with parchment paper. Bake at 350 degrees for about 30-35 minutes, or until toothpick comes out clean. Don't overbake. You want these extra gooey!

I’m glad you mentioned the texture of the coconut not standing out. I usually don’t make coconut recipes bc one of the girls cannot stand the feeling of the strands. I’ll give these a shot!
I really don’t think you notice the coconut, but she may feel otherwise if she’s really sensitive to it. I know Kevin is that way with certain foods (chocolate covered coffee beans AKA crushed roaches). 🤣🤣🤣

This sounds delicious. Substituting infused cannabutter for the regular butter would be so nice. I would also substitute apple juice for the bourbon because I like apple juice.

Ooo I bet these would be good too swapping peanut butter chips for the butterscotch! Smitten Kitchen is big enough that they could have sent a cease and desist letter to the content creator you got this from prompting them to take down the recipe, which I could see being intimidating but is likely ‘all bluster’ (as my grandfather used to say) because when I was in grad school I learned that it is nearly impossible to copyright a recipe. Just a thought. Love the video!
