Luffy still needs to refine of his Gear 5th usage. He’s easily got exhausted after using Gear 5th. Honing the skills to infuse Conqueror/Haoshoku Haki in his standard attacks and form without the dependence on Gear 5th will increased his stamina and strength when he’s in Gear 5th.
I think he just can't control g5 yet if we remember zone fruit have spirits and may be the spirit of nika was too much for him to handle that's why he couldn't stop himself from laughing and doing goofy things. It's proof is from impel down their zone fruits spirit completely took over them and they became brainless animals and that is why when he became serious against kaido he was still running around instead of fighting as if it was someone else. And him struggling against nika spirit for the control of body might be the reason why he gets tired quickly.
