I love your longer videos. You're such a chill influence in my digital world. Everything's always so calm and clean. The food looks delicious and I like that you didn't go 100% budgety, bc, of course you could have beans and rice flavoured with meat (which is great, don't get me wrong), but I love that you included fresh veg, fruit, delicious baby croissants, lemons. Instead of surviving, even in budget, you're thriving!
I grew up we washed paper plates and re used them we was so poor so love they fact you do budget meals hope you and your beautiful family have a great week hugss 💘

Best meal prep video I’ve seen in a while! You usually inspire me when you cook anyway, but this one was great. I’m for sure making some chicken salad this week and your idea of making chicken and rice soup from the carcass of the rotisserie chicken is just brilliant! I don’t know what they do when cooking those rotisserie birds but they are so fragrant and delicious! I save the carcass of rotisserie chickens for bone stock that I make in my instant pot, but I like your idea for the chicken soup. Thanks Jen…you have wowed me again!

The prices in the Walmart are not too far off our Walmart prices in Canada, but when I factor in the difference in the US $ versus CDN $ , wow groceries have really gone up ! When I do eggs for breakfast sandwiches, I scramble them and bake in the oven ( 350/375 for 10- 20 mins) on a cookie sheet sprayed with cooking spray. Then u can cut them to size or use a glass to make rounds.
The first recipe I made from your cookbook was the fish cakes. We love them! I've also used cod and salmon too and also was great. Thanks for another great video!

Put the green onions in water on window seal they will continue to grow and you can snip off as many pieces as you want I have about 8 in a small juice glass. I have not purchased green onions in 6 months.

I cook for one (me😁) - so I think I can freeze (except the salads and lunches) what I don’t use immediately. The crockpot chicken recipe reminds me of one that I love called “Chicken Crack” and it is almost identical to your’s but it includes bacon and ranch dressing mix. Using lemon in chicken is so good! I wanted to see if there is a price difference in eggs at my Walmart in Southern California. For 1 dozen Great Value brand eggs, the cost is currently $3.26. 😬
If you have a store that is targeted towards people from the Middle East you can often find much cheaper tahini than in a standard store. It lasts for a long time so if you like hummus you can really make hummus yourself for very little if you invest in some tahini. If you want to make it yourself but don't want to buy tahini, buy sesame seeds and roast them in a pan and either mix that in your hummus or spread them on top. That is still pretty close in taste.

Totally agree about the tahini. Homemade hummus is so good, but it can be expensive, and time consuming. Love all the ideas, especially the snack boxes, and breakfast croissants!

Most of the time though I just leave it out altogether. It really makes very very little difference lol, Murphy's like ummmmmmm where's my chicken salad???

My kids have been mad that haven’t bought cream cheese in awhile. Aldis raised the price to $1.45. I been too cheap to pay that much. On Friday the cheese store next to the Kraft factory posted a sale that Philadelphia cream cheese was .99 each. I bought a case of 36. Now we need bagels lol.

Food is crazy expensive. Even the deals are still expensive. I buy bulk when I can and freeze extra. I am spending a lot on groceries. I'm also trying to stockpile as well so I'm not shopping as often. I used to shop every two to three days. I'd shop and prepare meals on the fly. Now......I buy extra and freeze. I'd love to have a 3 or 6 month supply on hand. But....I don't have the organization for that. Lol

Yes. Typically I do add a few spoonfuls of sour cream as well, if I have it on hand!

The same eggs at my Walmart in NE Texas is $3.13. That's down from $3.96 a few months ago. It's crazy how high they are.
