I love how you always say “I don’t want to be a hero”. I know it’s a joke but as a working mom I agree that sometimes you just need that shortcut so you can have time for yourself and what is important to you. Thanks for the budget videos lately!

I love your longer videos. You're such a chill influence in my digital world. Everything's always so calm and clean. The food looks delicious and I like that you didn't go 100% budgety, bc, of course you could have beans and rice flavoured with meat (which is great, don't get me wrong), but I love that you included fresh veg, fruit, delicious baby croissants, lemons. Instead of surviving, even in budget, you're thriving!

Best meal prep video I’ve seen in a while! You usually inspire me when you cook anyway, but this one was great. I’m for sure making some chicken salad this week and your idea of making chicken and rice soup from the carcass of the rotisserie chicken is just brilliant! I don’t know what they do when cooking those rotisserie birds but they are so fragrant and delicious! I save the carcass of rotisserie chickens for bone stock that I make in my instant pot, but I like your idea for the chicken soup. Thanks Jen…you have wowed me again!

The prices in the Walmart are not too far off our Walmart prices in Canada, but when I factor in the difference in the US $ versus CDN $ , wow groceries have really gone up ! Great video as usual, I will be trying the chicken chili. Have a wonderful Sunday, Margaret

Hi Jen, this is my first time writing. Thank you for doing this really affordable menu plan. I’m 65 and on a fixed income, so I **really** need recipes like these. I cook for one (me😁) - so I think I can freeze (except the salads and lunches) what I don’t use immediately. The crockpot chicken recipe reminds me of one that I love called “Chicken Crack” and it is almost identical to your’s but it includes bacon and ranch dressing mix. Using lemon in chicken is so good! I make baked chicken with a lemon pepper mixture. I’m so happy I found your channel! Thank you, Jen !❤️

“If you've noticed that eggs are more expensive at the supermarket, you're not alone-and it's not just the usual grocery inflation you're seeing in other aisles at the store. The USDA has confirmed that an avian flu is spreading among many birds in the United States, infecting both backyard and commercial chickens and turkeys alike.
In particular, commercial layer chickens in Iowa, Maryland, South Dakota and Wisconsin have been affected. The state with the most endangered layer chickens-about 12 million-is Iowa, which produces the most eggs in the country. Backyard chickens in 19 states, from Maine to Nebraska, have also come down with the virus. Millions of poultry birds have died due to the illness so far, NPR reports, either because they succumbed to the flu or were killed to prevent it from spreading further. The commercial flocks likely caught the virus from wild birds, who have also been testing positive for the virus-the wild birds affected include bald eagles, mallards, owls and swans.
Egg prices are already on the rise, according to the USDA Egg Market. Inflation coupled with an increase in feed prices due to the war in Ukraine are the two major causes. The shrinking number of the layer chickens in the U.S. hasn't helped, according to animal protein economist Brian Earnest of Cobank. As the outbreak goes on, further depopulation could compound the problem.” (From: EatingWell.com)

If you have a store that is targeted towards people from the Middle East you can often find much cheaper tahini than in a standard store. It lasts for a long time so if you like hummus you can really make hummus yourself for very little if you invest in some tahini. If you want to make it yourself but don't want to buy tahini, buy sesame seeds and roast them in a pan and either mix that in your hummus or spread them on top. That is still pretty close in taste.

I mean I always use spices but it’s the different ones that you use together in one dish. My mom used to make salmon paddies and my son and I loved them, I haven’t made them because I don’t know what she put in them lol 😂. I know she used canned salmon for convenience and we all like making sandwiches with it as well. Thank you for sharing I love your videos I have been watching for several years now.
