Looks good. Here is a wonderful tip that no one seems to know. Instead of lemon in the cold water use 2 or 3 table spoons of honey per quart of water mix well. You can leave the apples out for hours after soaking for 1 or 2 min and no browning at all. Works amazing and adds a touch of sweetness. I don't remember where I learned it but I have been doing it for decades. Wish I had a freeze dryer thanks for sharing your video.
Great idea with the cinnamon - we'll have to try that on our next batch of apples. A suggestion - use ball jars and lids to store your short term foods. You can vacuum seal the jars in your harvest right, and if you are careful when you open the jars, you can re-use the metal lids.
New at this FD. I FD my apples they were fine when I sealed them in the jar with an OA. Now all 6 jars were sealed but as I opened them they aren't, they're spongy. Can they go back in the FD and start over?

Apple get air and moisture fast and yes they can be re done=)
Have you ever tried draining the apples and then adding cinnamon and tossing ?
Have you tried drizzling the apples with maple or date syrup? What about dipping them in peanut butter? Let me know your thoughts... Thank you.
I have not, i think it be good if the freeze dry process doesnt inflate the sugars too much=)
