Hi Leah! I started the fermentation on Sunday,I just opened it this morning,tasted more like vinegar and the plantain was black on the top,was that mold?the wine is not white as yours,it is more of off white/darker color
did u say black colour? that is not a good sign, this maybe as a result of either heat or issue related to chemical and i think it's also a little bit late...like you said on sunday, the ideal time to process it suppose to be on tuesday which was yesterday...when you soaked it on sunday, day1 monday was day2 and tuesday day3 and above all, you may be checking the outcome as room temperature may differs...

Yes, absolutely, but i would recommend you sieve it after 3 days and store in a air tight container for a longer days

I think the plantain was chemically ripened.i suggest you buy unripe plantain and allow it to ripe naturally.
