It actually takes a bit longer than the video. They cut a bunch of steps out. But Medevac units can start it up in just a few minutes from what I've heard. Especially an A/L like that one. If they were flying the M version there are a few more steps that can't be skipped

I know this is an old comment, but the M1 uses a gas turbine engine (the ATG1500), and this one also uses a gas turbine engine, but they are different models, that's why the sound similar.
It's so that you don't forget anything. Even pilots with 20 years of experience who have memorized the checklist forget steps sometimes because they were distracted or just forgot. It's a safety concern so you don't miss anything and then realize it to late in the event of an emergency
Even astronaut need checklist, it's not like "they are qualified to fly a plane, why can't they remember anything?". They can remember those steps but you surely don't want to miss one step when starting these types of vehicle because one mistake can lead to disaster.
