Drunken noodles are like the spicy cousin of pad see ew. Pad see ew has eggs in it, and fewer ingredients. But they have the seasonings, thick rice noodles and kai lan in common.
This is to me is a spicy version of ผัดซี่ิอิ้ว aka Thai char kway teow. ผัดขี้เมา Drunken Noodle must have basil leaves. Basically same as ผัดกะเพรา but with noodle and more veggies
I learned how to sharpen knives and learn different cutting techniques from RUclips videos about 10 years ago. It made life in the kitchen much easier. I came to realize all you need are sharpened knives and no fancy machines.

The biggest challenge here is getting the ingredients, in some countries it may be hard. I cannot get the Chinese broccoli where I live. Fresh rice noodle sheets are also hard to get. The rest is very easy.

Nah, 5 mins chopping half an onion, bell pepper, broccoli. 5 mins cutting chicken. 5 mins pounding chilly garlic paste. 5 mins mixing the sauce and cutting up the rice noodles.15 mins cooking. 35 mins total for cooking.

I wanna make this exactly as you did but the recipe only says "neutral oil". Would it be alright for u to tell us exactly what oil you used? I would guess avocado or peanut but I have a hunch those are both wrong..
Neutral oil just means any flavorless cooking oil that can handle high heat. Canola, vegetable, peanut, soybean, etc. it makes absolutely no difference, just use what you prefer.
Its pretty damn good and nearly consistent in flavor in all eating experience, which pad thai usually lacks (everybody/restaurants appears to make their own version haha), but the right pad thai just cant be beat.
Coming back after 2 weeks to say that If you know how to cook well enough to not have to measure everything this recipe does in fact take less than 30 minutes.
Fyi the authentic drunken noodle is much MUCH more spicy than that. It has more herb, such as young peppercorn, finger root, etc, to make it more spicy and hot in the stomach. Hence the name ‘drunken noodle’, because it suppose to heal you after hangovers! It is a good recipe for people who wanna try it for the first time tho! 😊
There was a Thai place I went to (unfortunately only a few times) that my family had been going to for years. Their drunken noodles I believe used really thin rice noodles, vermicelli maybe? Either way, these were some of the best noodles I have ever had, like top 3, but they closed 😢. I've been looking for something to be even remotely similar to them and nothing. I have found plenty of good noodles and all kinds of Asian food including Thai and Indonesian, but I've only found things I can call mere placeholder. Filled out my top 10s but nothing has ever satisfied me the same way that would allow me to stop the search. Maybe it is impossible unless I reach out to the family that ran it. I am not sure why I'm even typing anymore, but I guess I felt like sharing 😅
great video! the worst thing about thai food is that it really relies on its ingredients and the quality of them, and anything missing or substituted will just make the dish lacking or worse case throw off the entire thing, which makes it difficult to make thai food properly abroad, and I don't blame you at all. In this case it's the former, which while it isn't world ending, the กระชาย or fingerroot and young peppercorns really do add a lot to this dish and their (lack) of presence is sorely missed. I liked that you cooked the meat separately and salted it, great technique. The noodles are great but they're missing the char and browning which adds a whole another smell and taste to the dish, so you could just leave the noodles on a little longer for them to develop that.
Like I said, if you've made it before and can eyeball stuff or have some parts ready to go sure, I can see swinging 30 mins or a little less at home, but no home cook is multitasking like that, let alone their first time making this recipie. What about measuring out the ingredients, or washing the vegetables? Hell, just gathering up and then putting away all these ingredients will take a decent chunk of time. You'd have to be moving at a restaurant's pace to finish all this in 10 (lmao) minutes. Who on earth wants to stress themselves out cooking like that at home? Going at an average pace for an average home cook, this is easily a 45 minute + recipie.
This dish is slept on and its dumb. From Vancouver - we have so many pseudo Thai places that sell ketchup pad thai or soy sauce pad see ew. Most places dont even offer kee mao.. Maybe 3/10 places will serve it which really makes me miss Seattle because most thai places had kee mao
