I'm not a chicken salad fan, never had been, but I had a lot of leftover chicken in the fridge that I roasted a few days ago, and I'm sick of throwing away sour food. So I made it on a whim and this is one excellent recipe!! I am now a chicken salad fan ---but only of this specific recipe. The only change I made was substituting splenda ( the yellow packets) for the sugar. It measures spoon for spoon the same as sugar. And I used my own sweet pickle relish that I make with splenda instead of sugar. Tastes exactly the same as the store-bought unhealthy kind. This recipe is going into my permanent home recipe file, and that's saying a lot for me. I'm jus sayin...

I just made this and added six boiled eggs to it. I didn't even let it chill for 30 minutes before eating it. Also I used a rotisserie chicken because I can't deal with touching and cutting up a raw chicken.

Can you cook the chicken then do food prosesser then freeze half of the meat and make that part at a later time. I live by myself and too much to make at one time for me. I love your videos!!!!

When i make my chicken salad with the whole chicken also i season my chicken. I dont use sugar because the relish has sugar in it. The addition of nuts grapes or cranberries helps add a different taste. Sometimes you need a variety of flavor.
Not if the chicken salad is made right. You're using those other ingredients to hide a bad outcome of the chicken salad. The same goes for potato salad & macaroni & cheese. Our fore parents didn't add all those extras in their food & it came out just fine, now people have gotten so sophisticated, they're adding all these crazy items to their side dishes. TOTALLY UNACCEPTABLE! Leave well enough alone, before u kill somebody!😵

I never considered the food processor for the chicken, I always chopped it by hand. N o more hand chopping. I have a great food processor and I'm going to use it. Also I have a frozen chicken that was lounging in my fridge today for stock and meat for a pot of chicken and dumpling's. Now that while chicken will be converted to salad while the small packs of legs and thighs will wind up with some dumplings, plus I'll have a large yield of chicken stock!! I am excited!!
