Yup, they have the shiny textures in case someone hacks it or they decide on a shiny event. Manaphy for example was shiny locked in its egg, but not if you traded it to someone else who could match the ID with the egg. So they did need the shiny manaphy texture.

I had caught most of the Ramanas park legendaries, I also had Regigigas, Heatran, the 3 lake pokemon (though I never used them) and Heatran, if there were some I had yet to catch among legendary/mythical pokemon, they would be Shaymin, Manaphy (idc about this) phione (manaphy x ditto) darkrai, Cresselia, and for the remaining legendaries in Ramanas park, Groudon, Latios, Kyogre. I'm pretty sure I caught all the others, but Mew isn't possible for me because I didn't get it in lets go. The only thing I have to say about the legendary pokemon among Ramanas park for bdsp, is for Brilliant Diamond, they should add Palkia to the legendary pokemon in the park, and likewise, for Shining Pearl, they should add Dialga to the legendary pokemon in Ramanas park.
You just need Let's Go save data. I borrowed my friends copy of Lets Go Eevee, played long enough just to be able to save, and I was good to go for Mew.

The only thing about running into a shiny one is basically the game giving you the finger. And your extremely lucky to find one and beat it to boot without hacking the game unfortunately. Also can you find Celebi and Darkria and Dexos to finish up the national Pokédex?
