  • Moond daal stuffing,
    250 gm moong dal(green gram)
    40 gm besan(chickpea flour)
    1 tbsp khara dhaniya(coriander seeds)
    1 tbsp saunf(fennel seeds)
    1 tsp jeera(cumin seeds)
    6 long(cloves)
    1 badi elaichi(big cardamom)
    1 tsp khari kali mirch(black pepper)
    9-10 tbsp ghee( (clarifide butter)
    4“ adrak(ginger)
    5-6 Hari mirch(fresh green chilli)
    1/2 tsp hing(asafoetida)
    2 tsp dhania powder (coriander powder)
    2 tsp Kashmiri Lal mirch(Kashmiri red chilli)
    1 tsp garam masala(hot spices)
    3 tsp amchur powder (dry mango powder)
    1 tbsp Kasturi methi(fenugreek)
    1 and 1/2 tsp namak ya swad anusar(salt to taste)
    2 pinch khane wala mitha soda(soda, bicarbonate)
    Kachori k liye dough
    1 cup suji(semolina)
    3 cup aata(wheat flour)
    6 tbsp oil
    Namak swad anusar(salt to taste)
    1 tbsp Kasturi methi (fenugreek)
    Sabji
    1 kg aalu
    1/2 kg frozen matar (frozen pea)
    50-60 ml refined oil
    5-6 Hari mirch(green chilli )
    2”inch adrak(ginger)
    1/3 spoon hing (asafoetida)
    1 spoon methi powder (fenugreek seed powder)
    1 and 1/2 spoon Kashmiri Lal mirch(Kashmiri red chilli)
    3 spoon dhania powder (coriander powder)
    1 spoon amachur(dry mango powder)
    1 and 1/2 spoon haldi powder (turmeric powder)
    4 tej patta(buy leaf)
    1 spoon jeera powder (cumin seed)
    1 spoon garam masala(hot spicy)
    Fry k liye refined oil
