    thanks. How would you do cross rib steaks, 1.5" thick.

      I would Sous Vide them at 132 degrees. For me thats med rare than either use a torch to crisp & Sear them or sear them on a hot cast iron.

      @@ElizabethsSite Thanks, that's about what I do, except I found that 134 degrees then sear them for 45sec or so on each side is about right.

      @wally6193 yes 🙌 that extra couple degrees makes a difference it’s been a minute since I’ve done individual steaks 🥩 thanks

      @@ElizabethsSite I started out using 131/132 but it seemed still very rare, maybe it's because I'm at sea level(but it shouldn't).
