This is why all this recipe sharing is really worth! :))) I'm so glad you found that good old family recipe! Yes, it can so bring back childhood memories! I did only one alteration to the "original" recipe, and that is that I left out the margarine/butter, but it didn't change at all the taste.
I never tried to freeze banana balls, but sounds like something that should work. If you tried, it would be great if you let us know how did it turn out!
How long is the process supposed to take. I followed recipe exactly and this took me better than an hour and a half . Is this normal? Also through out the process I had to keep removing pot from heat to try to prevent syrup from boiling over.
How long will it take to boil down depends on the size of your pot (the wider and deeper is the best for this) and the heat too. Keep ti on medium heat if it has a tendency to boil over, but anyways you have to keep an eye on it through the process. I never had an issue with boiling over, but from time to time you can remove the film that is forming on top or just stir it slightly. Cooking with raw milk was the biggest challenge, but if there is no cream in the milk, it goes fairly without issues each time.
Basically, whatever you do, it will change the filling completely. This milky cream comes as a sort of homemade condensed milk, sweetened, with the addition of walnuts, only the sugar will hold it in place. Honey would not work in this recipe, it gives kind of a weird taste when cools, plus you would need margarine or butter for extra thickening. Milk powder would still need some sweetening, while syrup I didn't try, but basically, that is sugar too.
What else you put in except processed cheese? (we are talking about those thin square cheese sheets, right?) Btw. If you make those with yoghurt and bananas, do let me know how it turned out. I am very curious what will you do with yoghurt. :)

I use whole milk but tried it with both 3.2% and 2.8% too and it worked nicely.

this is a really good recipe for kids!!
No matter how much sugar it contains, for kids (and us) it is still much better than the store bought sweets.

I store them in a container in the fridge or in the pantry if it's really cold.

These are store bought... Not much of taste from the plane wafers, but with great cream, it works well!
I am unclear as to addition of milk. Is it 1 litre and bring it to boil and then add another litre or ???
I measure the litre just to note how much should the milk boil down. You can bring it all to boil immediately!
