  • Ingredients
    Bhindi/Lady Finger - 250 Gram
    Onion - 2 medium sized finely chopped
    Tomato - 2 pureed
    Grated ginger - 1 Teaspoon
    Green chilli - 2 cut long pieces
    Turmeric powder - 1/2 Teaspoon
    Red chilli powder - 1 Teaspoon
    Coriander powder - 1 Tablespoon
    Kasuri Methi/Dry fenugreek leaves - 1 Teaspoon
    Heeng/Asafoetida - a pinch
    Cumin/Jeera - 1/2 Teaspoon
    Garam Masala/All spice mix - 1/2 Teaspoon
    Fresh Curd - 1 Cup
    Salt - as per taste
    Oil - 4 Tablespoon
    Instructions
    Wash and pat dry bhindi completely. Then, cut it in long pieces. (You can pour some lemon juice over it so that it will not become sticky)
    Now, take a pan and heat it. Add 2 tablespoons oil.
    Saute bhindi on a medium flame for 5-7 minutes. Then, take it out and keep it aside.
    Meanwhile, take another pan. Add 2 Tablespoon oil and heat it. Add asafoetida and cumin seeds.
    Add and saute grated ginger and green chilli.
    Add chopped onion and saute it until it turns light brown.
    Now, add and saute turmeric powder, red chilli powder, coriander powder, and garam masala for a few seconds.
    Add tomato puree. Mix well and cook it on a low flame.
    Once the oil leaves the masala, add fresh beaten curd to the pan. Mix well. Keep the flame low.
    Add kasuri methi and salt. Mix well.
    When the curd starts boiling, add sauteed bhindi to it. Mix well and cook.
    When the oil leaves the side, the bhindi is ready. Transfer to a serving bowl.
    Yummy 'Masala Bhindi' is ready to be served with roti/paratha.

    Wash, dry, and then cut the bhindi. After cutting it, pour some lemon juice over it, to make it non-sticky.
    If you want you can avoid onion and can make the gravy with tomato.
    It is recommended that you use curd at room temperature.
