The mdf ceiling should hold for a few years at the worst. If so, that'll be long enough to gain even more experience for when you redo it and you'll have a boat load of money to spend on it from this channel and your apparel!! Love your videos!
You must derive an immense amount of pleasure knowing that you built such a strong and reliable structure. Great reward after the months of work and a thing of beauty to boot.
It's a shepherds hut. Sort of like an old time camper, used as a shelter for shepherds in bad weather as well as a supply wagon. Their history dates back to the 1500s, and they were commonly built from whatever scraps were available.
I liked your decision to drill pilot holes in the oak pieces. I learned a long time ago using screws in oak without pilots is asking for cracked wood. I got a giggle out of your "solid at the end o9f the video.
I always use pilot holes. The screws I saw him inserting were heading directly in to end grain. It's insane to drive screws in to end grain without pilot holes and properly designed screws spec'd for that application. And any lumber that is strong enough for flooring can use pilot holes even though many floors are nailed, although even those nails are specifically designed for that application.

I don't think any of us are in any position to criticise your choice of MDF. You're doing something very few other people do these days.

Add a plastic barrier layer over the roof grid after you put the insulation on. This will protect the insulation from water leak through.

Don't forget to seal the holes you drilled through the MDF. They will become a moisture magnet and swell.
I do question the building of the roof before the floor and walls, that'll be a heavy beast to lift out of the way.

Hi I think the progress is great. I think a two pack wood filler might be stronger than the water base filler on the roof. ok have fun 🕊️
Did you consider one of the self-leveling rubber roof coatings? They come in black.

I'm sorry to say that. If there's a scratch in the paint and moisture gets in, the MDF will swell up around the scratch.
