I like to saute zucchini in olive oil. When they are about done, I add in half a stick of butter. Once the butter is melted I add in minced sardines and minced garlic. When fragrant, I add a small container of grape/cherry tomatoes (halved) and turn the heat down to simmer until the tomatoes are cooked through and have released a lot of their liquid. I enjoy this over linguine pasta. It is so delicious and a good way to boost omega 3 consumption.
I sauté my zucchini the way you do, but I add diced onion with the butter and a dash of nutmeg. I am going to try it with sardines, which I always have on hand. This is an inexpensive but delicious meal.
