    Man, i am so glad you are back. 2020 has sucked from a hunters perspective, and watching your vids has me frothing for bushtime again. I am planning a trip up into the Murchison for a few goats with the bow in April or May. Hoping my lousy job doesnt keep getting in the way. As always, loving the good times being natural! Good luck in 2021. Hope you fill your freezer and enjoy life to the fullest.

    He buddy. First up huge fan and love the ‘real feel’ in the presentations. I have found marinating the meat when butchering and cryovacing (I’m a crap speller sorry) it also saves time but marinates while freezing and thawing. My meat has never been so soft and tender as well. Jbv SA

    Another awesome video! Love your channel 👌🏼 little secret to make your Thai/Asian inspired recipes or any general tougher cuts even more delicious, before you marinate your meat sprinkle a good amount of bicarbonate soda over mix it together and place in the fridge for an hour, take it out wash the soda off with cold water then do your marinade. This will take it to the absolute next level of tenderness and you’ll use this method many many times I assure you! I’d love to see you use this in another video 🤙🏻 cheers

    last three days with fires, floods and pandemic have taken a massive toll, I have had serious health dramas too understand your thoughts. magic nature to experience stay warm and dry that is the key in nature lol, that goat is just waiting for a great curry but that stir fry add champinons, mushrooms, sultanas and nuts even peas

    I harvested a fallow buck last year over the aus day weekend in the New England area. The tips were still soft which I thought was a bit odd. I also observed a group of does with fawns still on the ground on another property. I'll be heading back there this weekend to see what I can find. Ill let you know.

      @@AussieBushHarvest So this morning I was out and luckily enough to shoot a 13 point red. I was shaking like crazy, I knew he was big but wasn't entirely sure until I got up to him. He was massive and in full hard antler. He was just passing through to another area.
      So this area had 400mm in 2019, 2020 it had 1375mm (average is about 1000mm). The fallow i shot aus day 2020 after the drought were in soft velvet (they were younger bucks tho). Today after a big rainfall last year the red was full hard antler. Crazy times

    Phew! For a minute there i thought i'd have to watch even more blooper vids. So very glad you are back. I'm a chef mate and loved your cooking segment. I make a stir fry almost exactly the same, also love my fish sauce but some people i make it for say its too salty, so i use a little piece of palm sugar. They come in small round blocks at your asian supermarket. TOTALLY changes the flavour and dynamic of the dish. Always my pleasure to see youre work Profty.

    Love your work, was a chef for a long time and I tell you what it’s something you could do after a day out hunting particular if you do your marinade and meat in a vac bag before you go out.

    I’m very fortunate to call the Snowy Mountains home, so some of the best hunting in the country at my door step! Mate, your videos are so motivating and educational, I get itchy feet every time I watch one. I’ve had my R licence for over 10 years, but only just starting to get into it properly and take it seriously, I still have so much to learn, but loving every minute!

      Hey Dan, mate i just got my R license and would like to pick your brains if you dont mind. Mate when you book your hunt on line, how do you know (when you turn up to the forrest), wher the physical boundaries of the area you can hunt, actyually are? I mean how do you know when/ where you can actually start hunting? Appreciate your help mate.

      @@bartfenech8495 NSW DPI supply an app as well as GPS and PDF maps which show the boundaries of the forest and any applicable exclusion zones. If you login to the portal, there is a section to download the maps.

    Great Job Profty. I was down in the snowys in early Jan. There were super young fawns around. The 2 velvet bucks that I saw looked a little bit behind but it was difficult to tell, this area was still a dry, they don't seem to have had as much rain as Sydney and other areas. Last year in May there were also heaps of super young fawns on the other side of the Snowys, which was strange as. You should do a QnA video.

    Always love a new ABH vid.
    Hot tip, when cooking the meat try not to overcrowd the pan otherwise you end up stewing the meat instead of browning it off. The result is an “ in between” cook where the meat is neither falling apart or nice and tender.

    This has been my style of eating for the last few years since really starting to hunt more sustainably. Since finding guys like your good self and HD amongst others I have only used beef/lamb/pork only about 20-30 meals a year, rest of the year is meat from deer and goats that I have been lucky enough to harvest during my two trips a year with my mates. Hoping to get into some public land hunting once I get an R license and doing more than two hunts a year. Definitely inspired by guys like you, cheers and enjoy the year and “warm barrels” as some leg says 👍👍

    I got the fallow buck of a lifetime today and he is in hard velvet.
    Somewhere between Tamworth Coonabarabran and Quirindi. I've never seen anything like it. All the good feed is doing wonders for them.

    Hey Profty. Love the video, mate. You should come up here some time in the new year and have some serious cooking collaboration happening. Our garden is going gangbusters and we have a pizza oven now, too.
    Re the fallow: It seems they're really far along up our way (New England and western slopes area). My friend shot a buck a few days ago and he was hard all the way to the tips! I wouldn't be surprised is they start stripping earlier than usual. I saw a buck who looked to be in hard velvet yesterday but he was a smaller buck so sometimes it's a little hard to tell. I'll be scouting big time before the rut and I have some cameras out that I'll check soon, so I'll keep you posted. It's great to see the deer bouncing back after the drought.

    Put a little bit of bicarbonate soda on the meat stir it through and let it sit in the fridge over night before marinating and it’ll make your meat so tender it’ll melt in your mouth

    Hi Guys.
    Although most of my experience and training has been in Africa but very similar climatic conditions I have noticed similar things in the game and cattle populations regarding breading and conception of both cattle and game after prolonged drought . Experience has taught me that this is the result of sub par condition in the animals and they are simply not able to conceive . In many species there is a direct correlation between ability to breed and the animals mass. So things can be thrown way out of kilter if the animals are coming of a very poor diet into a lush diet as in the case of the drought then fires then rains and good grazing. Things should stabilise in the next year or so. However there may be a disproportionate number of dry females in the next few years due to the other side of the problem , good conditions very fat females. Most hormones are fat soluble. All boils down to balance.

    Gday Aussie Bush Harvest, just like to say bloody good video. Just sharing my experiences about the topic Towards the end, on how the deer or cow seasons are abnormal. This abnormality is also occurring within NSW for mud crabbing. Last summer, when the droughts were occurring, I'd catch 5 a week, were now you would be lucky with 2 a week. Personally I think the previous drought has affected the animal movement quite a bit. Cheers. Also love the Vulcan State mushroom hunt!!!

    Great to see how it's done in other parts of the world. Here in Minnesota, US are firearms Deer hunting is in our Fall. The first couple weeks of November in cool to very cold weather typically. And it's interesting to see a US made lever gun being used as well. I'm a life long hunter and now land owner watching videos since it's -20F ( -30 ) outside during a cold snap.

    it rained most of last year quite regularly where i am, normally an extremely dry environment, the grass is tall and green and the livestock can only just be seen in the paddocks, pretty rare

    Profty great work and keep it up.
    I haven't got out for a few months but a hunch might be the affect of the drought and then combined with this summer being comparatively very cool and wet.
    We only have this combination every ten or so years when we switch from the conclusion of El Nino to La Lina.
    I should have been more diligent in keeping diaries over the years, but in the three big drought break / wet summer combinations I have experienced the hunting patters seem to go out of whack.

      He has done a couple gun videos on the guns that he has but mainly he doesn't have a lot of guns to show off which isn't a bad thing just means he doesn't have a huge arsenal to show on camera.

Can you make some videos on some advice on how to acquire permits, trainings,etc on acquiring rifle for hunting porpuses and access to NSW public forest for hunting? Thank you very much buddy.

Haven’t had the chance to hunt deer ever as lived up the cape for 30 odd yrs but have killed a zillion pigs tho👍 which is y I guess deer really interest me now I live in Sth east Qld. u r very blessed to have land to hunt as every bit of public land here is closed to everyone which sux as the ferals r breeding like crazy an the government is doing nothing but sending rangers to catch an fine u an putting up cameras so they can just send u the fine in the mail??

    Regarding the odd cycles, iv been saying for a couple years that the seasons are moving a bit later. Anywhere from 2 weeks to 6, I’m a farmhand and as I grow up iv definitely noticed cooler nov-dec and hotter mar-April. I was called a conspiracy theorist for mentioning it but I think the change is natural(or at least gradual), just not aligned with the human time clock.

    Yes I have found the rut/breading pattern drastically changed over the last 2 years 2019-2020 and I have a property in Oberon same area you hunt I have been finding deer with younger and founder fawns later in the year also 2020 I found the rut started early April and ended almost into March would love to get more info on the phenomenon???
