Great video! I'm 76 and NOT pregnant but live with my daughter and her family. I have grands that want a lunch and days when my daughter is just overwhelmed with her responsibilities at work and LOVE to fix something QUICK for everyone. This helps me so much as I think of canning as fast food 2.0! No last minute trips to town with an empty wallet. Just makes good food quick!

You (and Becky from acre homestead) have changed my way of thinking about food. Your “every little bit counts challenge” and talking about being a good steward of what you are blessed with has changed our food waste. In 3 months I have almost filled 1/2 a freezer with leftover soups, broth and food that would have normally sat in our fridge and gone bad (we are a smaller family of 4). I now have food to take for lunch instead of eating out at work. I’m nervous about canning but it is next on my list to learn and this upcoming spring we are going to try raised beds and planters for a small garden. Thank for your inspiration and best wishes for a safe delivery of your new baby! 😊💞

Maybe even with a freeze dryer recipe section?? I've gotten away from freezer meals. I will put certain items in the freezer to have ready but I have found I can get dinner done far more quickly using my home canned foods than a freezer meal. I meal plan and do a great job staying on my menu planning so on the rare occasion we get home later than planned, a freezer meal doesn't help because its frozen! I work outside of the home at least a few days out of the week so I find it just as easy to thaw my meat and meal plan from that then it is to pull a freezer meal out. I plan the types of dinners we have around the kind of day we have in terms of after school activities. Opening jars and heating up is always a saving grace. Plus my freezer space is hard to come by since we have whole hogs and steers every year plus the garden produce. I have a small section to tuck away "left overs" or meals

I totally understand being intimidated by pressure canning-I was for quite some time. I practiced with water bath canning and once I’d pickled everything I could think to pickle and made a few gallons of jam (still giving jars of that away ☺️), I braved up and broke out the pressure canner and my life has never been the same. I started with an electric pressure canner, and if you can afford one, I would recommend starting that way since the machine takes all the thinking and danger out of the process. About three runs in that and I graduated to an all American traditional canner, and I’ve actually had better seal rates with pressure canning than water bath, and it’s really not dangerous to do provided you follow directions.

It’s so amazing to me how RUclips connects so many people through interests etc. we don’t have much in common at all, Jessica. I live in a city, I’m single with no kids. I don’t have a farm or land or anything just a small backyard with a tiny garden. And even with all the differences, I find so much comfort and joy through what you choose to share of your life. Sometimes the internet can be wonderful :)

Happy to see you this morning! You look lovely today. I’m surprised at your energy level this close to giving birth. You’re an inspiration. Thanks for the tips and tricks Re: alternatives to freezer casseroles. I’m sure there’s lots of us who prefer not making the dairy heavy casserole dishes, especially if one was not raised on casserole type meals. My mom always served a protein, starch, veg and salad. Period! Haha
    Take good care. Bless you.

Something I've been doing lately I always no matter how much I eyeball it is make 2 much spaghetti noodles so I've been freezing what is left with some extra spaghetti sauce. I have some now that I made last Monday that will be served tomorrow ( Monday is always our spaghetti meal day) I also cooked up 2 additional pounds of burger that day and froze it. I have construction workers here tomorrow so my day will be thrown off no worries thaw heat and serve dinner. So that is one thing that can be added to the deep freezers that isn't dairy heavy. Good morning! You are truly amazing and inspiring! At our home it’s just my husband and I with the occasional other family visitors added in. I wanted to just emphasize that your approach is so useful for all family sizes to consider. As we are all figuring out how to cope with increasing food prices, shortages, etc., buying in bulk whenever possible and really avoiding waste becomes more necessary for everyone. I deal with food intolerances (dairy and gluten); and my husband has Type 2 diabetes, so many of the freezer meals don’t work well for us. I have one small chest freezer and one fridge/freezer so the storage is also an issue. Then, there are other issues such as electric power failures. Those happen short term, but frequently in our area. A few years ago our entire state went through horrible storms and flooding and many were without electricity for more than 2 weeks. A lot of freezer food was lost. Additionally, stores and gas stations were also impacted. So, my point is that families of all sizes and circumstances can greatly benefit from the invaluable information you are providing. Thank you and may God richly bless you and your beautiful, growing family ❤

Hi Donna. My best friend, who's in his 70's has got Type 2 diabetes as well so I like to can some nutritious meals for him to make sure he eats well. He lives on his own so is not always bothered to cook and will rely heavily on carbs like bread and pasta, which always mess up his sugar levels. I can meats and stews for him to encourage him to eat well.
I hope you and your husband are doing well despite the mess the world is in right now.

I just did freeze drying of a vegetable bean and sausage soup. And I canned 9 pints of beans, and 9 pints of vegetable stock for us. Squeezing it in between snow melting and the next storm coming. I can outdoors with my pressure canner on a camp stove, the all American pressure canner is too big for my glass top electric stove. But I would not trade it for anything!!. I waited for years to get it, and only wished that I had made the decision sooner, it really upped my canning game. Wow!!
I can't wait to try the sloppy joe recipe 😋. God bless you and your family, your videos are a true gift.

Thank you for putting words to this. I also find that I have gone more and more away from freezer meals. I do freeze leftovers, but those will go with my husband and kids to work and school. More and more I find that I get more out of my freezer by freezing pre prepped veggies instead of whole meals. It’s a lot more flexible. This way I can pull out a few cans, and add some pre prepped veggies to it if needed. I also like to keep premade pie crust and pizza dough in the freezer. Like you I MRE’s are canned. I do a lot of the same bases as you do too. You are right that it helps a lot. Have a blessed week.

I love seeing the stocked shelves in the background - what a comfort it must be to have all that food ready to go! I do a lot of preserving using my freezer - I store seasonal produce as well as tons of made from scratch foods…but I also want to learn how to do pressure canning. That’s my goal for 2023!! Thanks for all the inspiration and motivation!! 😊😘

Thank you Jessica! I look forward all week to your video. We're a day ahead here on Guam so I normally sit down after everyone is fed and out the door and enjoy your latest creation on my Monday morning. It really inspires me for the week. I love watching your pressure canning videos. I just received my pressure canner I actually went with the NESCO electric pressure canner. I had wanted an All American for the stove but relying on solar panels the electric one consumes less energy than my stove top. I'm just starting to use it so pray for me I read all the reviews and pro's and con's so we'll see. I have about 60 wild chickens I need to process and like you I'm out of freezer space. We get a limited amount of certain items on island so alot of my freezer space goes to cheese and seasonal produce that I grow like bananas and mangoes that are harder to can. Watching you can meat has been an eye opener for me and gave me the confidence to try it. Also living on an island fish is abundant and I'd like to try pressure canning some fish. We went 3 months recently with no chicken in our commissary due to supply chain issues so relying on what we can catch, raise and process ourselves is very important. Also I'm trying cubed pumpkin for the first time we got an excess of pumpkins this year which is super rare and they were .19 cents a pound so I'm going to try your method, and make roasted pumpkin seeds. Thank you again!

Great video Jessica. Hey if you freeze your biscuits unbaked….you can pour you pie filling in a casserole dish and top with unbaked biscuits and sprinkle them with a little sugar for a quick cobbler type desert and bake. Look forward to hearing the news 💕🇨🇦
