Great interview! One comment: "Factory made and generic" for the Italian imported amphorae is imprecise. Those that I import are made by hand by 2 artists in tuscany whose family has been molding clay vessels and artifacts for generations. The production shop is very small. The quantity produced is very limited. I import roughly 30 a year since 2013 and have distributed them in Oregon, Washington, California, New York, Arizona, Texas and Canada to many happy winemakers. In regards to the Tartaric acid addition when they are new for your amphorae, those from Italy don't need as much and usually not at all. The pH shift is negligible. There must be a difference in the composition of the clay used.
