I see Josh is sporting a set of aerobars. I'm a recent convert both for drop and flat bars. They took some getting used to but now I wouldn't go without as the position is very comfy. For bikepacking I like the elbows high, which means using the extortionately-priced Profile 7cm risers. Not all aerobars allow stock risers but often you can fashion something yourself. Aerobars are a great place to attach lights and accessories as well as strapping on a dry bag, eliminating the need for a harness.

I'd say that 2 sausages would be standard issue in Scotland, unless smoked when half is the norm. 3 bangers is an absolute bonus!

The tent is an Alpkit Soloist, and as he's 6'6" I'd imagine it's the XL version.
