I feel like instead of getting hurt when you attack genocide toriel she should shield herself with fire, effectively burning your hand if you attack losing you hp, and you have to get her to stop shielding to kill her with one hit.

Makes more sense than Sans' fight. I imagine after you leave the ruins she goes back to where she met you. Along the way she sees a trail of dust, not wanting to involve anyone incase they got hurt (she protects Sans) she pursues you and manages to catch you in the arbiter's room before Asgore. Asgore in his grief knowing that it's too late to fix his relationship either lashes out in anger or leaves himself open either way Sans is still there by the barrier, good luck with that!
Good boss fight, but it woulda been cool to see a little more variety near the end. Maybe her attacks getting faster (similar to how undyne the undying’s circle of spears gets faster during the second phase) would have been good.
