The BIRTHPLACE of KHINKALI!! Making Georgian Soup Dumplings in Kasbegi, Georgia

    My incredible time exploring the Republic of Georgia continued with a road trip to the tiny town of Stepantsminda, also known as Kasbegi! Come with me as I take you with me to have some delicious Georgian food and visit some attractions on the way to Kasbegi, Georgia!
    My guide Tim and I began our afternoon with a drive along the Georgian Military Highway to the extreme northern part of Georgia. Kasbegi is a beautiful alpine town surrounded by mountains located just 12 kilometers south of the Georgia/Russia border.

    On the way, we’d visit Pasanauri, the birthplace of the khinkali, a Georgian dumpling that is a staple around the country. It’s a winding road through the mountains and I couldn’t wait to eat some!
    We passed by a gorgeous, blue reservoir that reminded me of Lake Koman in northern Albania. We stopped at a market for some Turkish sand coffee and then arrived at Ananuri Fortress!
    The oldest tower in the fortress dates back to the 14th century. One of its two churches is from the 17th century and the other is from the 18th century.
    The exterior of the 18th-century church also features a lot of grape vine carvings, as wine is a big part of the culture. It’s reflected in the religious architecture!
    Inside the church were old frescoes from the 17th century and plaster from the Soviet era when they whitewashed the walls.
    As you leave the church, you get great views over the reservoir and the belltower. We continued on along a river. We reached the confluence of the White and Black Rivers and stopped at Guda Restaurant, a modern but rustic restaurant in Pasanauri.
    Inside the kitchen, I watched the cooks make several types of khinkali: beef and pork, lamb, mushroom, potato, cheese, and garlic. The lamb khinkali was so juicy and very different from the beef and pork. The garlic khinkali was shaped differently and was unbelievable.
    The tarragon chacha was really nice, and the mushroom khinkali was spicy and doughy with lots of nice herbs. I loved it!
    The Osettian beet top & cheese pie was earthy and herbal, almost like a beet root and cheese pizza. I loved it! Next were the potato khinkali with black pepper, which was almost like a big potato gnocchi.
    Then, we had some Black Lion American Pale Ale it was crafty, light, and crisp with a light head. It was a good beer and easy to drink! Then, we drove to Restaurant Qorbuda to try some chacha!
    The restaurant was a two-story, rustic, alpine house with a terrace. The melon chacha was light and smooth! Then, we headed upstairs to their terrace. The area reminded me of the Albanian Alps!
    We continued further up into the mountains, enjoying the views. There were lots of trucks on the way. We passed Gudauri, the biggest ski resort in Georgia, on our way up to the mountain.
    The area was a mix of hotels, ski resorts, and houses. It was getting really cold as we climbed further into the mountains. Finally, we went through the pass and made it into Stepantsminda, also known as Kasbegi.
    We arrived at Alpenhaus Hotel, where we enjoyed chacha, cherry juice, walnut salad, puri, lobio, mchadi, a chicken quiche, a chicken wrap, and chicken with fried vegetables!
    The lobio was creamy and spicy, and contained some walnuts. The house special was a creamy tava dish in a clay pot. Everything was so fresh and tasty. The salad with the tomatoes, coriander, and walnuts was excellent. Everything contained walnuts!
    Finally, we ended with some strong chacha!

      Beatiful indeed, I will have to visit someday when pandemic ends. Funny I was born in Ukraine during Soviet era but never knew how beautiful Georgia is.
      In Odessa where I’m from I had many Georgian friends growing up and I wish them well today in 2021

    Just wow - now that's what I call a nice getaway.. Those mountains, lush with green, locals creating and dishing out delectable cuisines ... the sheep roaming around in complete freedom... all within the cool/misty air of the Georgian mountains... slightly drizzling but its cool because you know... nature! LOL - sign me up! You make me want to travel to Georgia more and more every day in this series David... you're a global ambassador, truly! Food looks amazing too esp the potato khinkali + some APA beer - sounds like a good time to me!

    Soooo beautiful. Thats my kind of place to seee. I grew up with mountains and just love it. So green and lovely. Fortress is amazing . Love historical sites. I would love all flavors of Khinkali!! just yumm and the 19 folds a must awesome . Mountains so lovely beautiful hotel.. Even in the rain is calm and relaxing :) Dinner looks just as amazing!! Georgian food I feel I would really like .

    Albanian -Canadian here, never missing any of your videos and waiting for the moments when you are reminded of and mention Albania. Love you for that David. Georgia's mountainous country side and nature very much like Albania. Similar culture too, with grape pergolas in every house and the making of raki/chacha in the same way. Both poor ex-communist block countries. Their beet greens & cheese pastry looks similar to byrek/lakror.

    Mmmmmm, so much good food! I need to find out if there are any Georgian restaurants where I live (Maryland/DC area) or anyone who makes khinkali. As you said in another video, they're like big xiaolongbao.

      Sa-kartvel-o is in Georgian language. In English, it would be Kartvelia 🥳 Georgia is the name given to us by the Greeks and means an agricultural country. Gorjestan, Gurjistan and Grusia are incorrect pronunciations of Georgia

    A BILLION Sheep on that mountain, really......... Population of this small country is only 4M, world population is approx 8B. No, modicum of any accuracy on this channel any more. We understand majority of Americans don't even have a passport and wouldn't be the wiser but there's some pretty clued up people who on occasions may visit this little channel of yours.

    Those dumplings originate in China.. brought to Georgia through the ancient silk road.. then adopted by the Georgians.. who like to make big claims about how they've invented wine and dumplings haha.. no offense, I like you Georgians ))))

      We don’t say that we invented KHINKALI, no. Thats not true. We just turned dumplings into khinkali with its unique flavor and spices. Thats it

      khinkali is much different than china dumplings and also it is much delicious china made up dumplings but it sucks compared to khinkali so it's makes no sense

      Georgia is one of the centers of origin of wheat and is home to numerous varieties of wheat (many of them endemic), due in particular to its highly varied climatic conditions and soild. Tsiteli doli (Triticum aestivum var. ferrugineum), or “red wheat,” is a landrace of winter bearded (or awned) soft wheat. google!
