Ricotta is a great cheese for pizza. But you need to mixed it with cheeses that have a high melting point.

This guy really wants us to trust him but u know what? I don’t, cooking the sauce is pointless
I hear ya, but I did say it’s unnecessary, now I usually just do the san Marzano’s, some salt and olive oil now uncooked - it takes a while to get over not cooking it and trusting
i think cooking the sauce adding extras is a good idea,
Perhaps, depending on what you're going for. I like to add sauteed shallots to my sauce, cook them together on low to get a good marry.
