It's my second restaurant. I'd been cooking professionally since 14 for a caterer and right to the Famous Old Mill Restaurant in Westminster, Ma. What a Responsibility at age 17. Same with the catering at age 15 I was head cook.
Your approach to cooking reminds me of Aussie chef Bill Granger . Simple but sophisticated that lets the ingredients speak for themselves. I am going to have my first shot at one of your recipes namely Chicken Piccata . It looks great.
I chose this dish for tomorrow as i hv assesment on college and i hope it will turn well and not a disaster. Looks amazing . Thank you for posting the video. You inspired me a lotxx .
I made your chicken piccata and it was excellent. This was the first time I used sun dried tomatoes. It adds so much flavor to this dish. The only thing I changed was the flour to a gluten free flour. You are the best chef!!!! Thanks for sharing so many excellent recipes. Next one I am going to try is the Minestrone soup.
I can't wait to make this dish. You have such wonderful plate presentation, my dishes always look like a train wreck when they make it to the dinner table. I have found that slices of lemon sauteed before hand (caramelized to a degree), and set aside as a garnish is also amazing... the lemon rind itself is edible then - and delicious. I'm a big proponent of roasting/grilling lemons. I will definitely try this with the piccata. we are getting a new copper cookset tomorrow, so I will use this recipe to inaugurate it! Served with sauteed zucchini and peppers and angel hair pasta with that luscious looking sauce! Tx, Steve!
After a while you start running out of words to use here. I don't know what RUclips does for Category Awards for Video Production and all that as like Emmy Category Awards and such like that. But if there was such an award given, many here will agree your Cooking Channel would be most worthy of a "Michelin Star" like award for outstanding Host, Food Presentation Quality, Artfulness, Video Editing and Production, For Guilty of looking too Delicious in the Food/How To Category.
Done! Very nice. The sweet lemon gives the dish a nice extra dimension. A bit saltish due to the store bought chicken stock I added (good I didn't have the Capers then!). Next time I will grate a little parmesan cheese on top of the chicken for an extra kick and halve the chicken stock.

@wildonesmom Sure...the wine you use doesn't have to be expensive. Pinot Grigio is a good Italian wine and for a dry white wine a good quality American Sauvignon Blanc works really well with this type of dish.....hope this helps Steve:)

Today I'm serious when I say I can't find a decent cook at any age. And I start my dishwashers at $11 an hour. The cooks start at $14 depending on experience and they all lie. I use to be able to let a server take the grill so I could take time off. Now I would have to close. No one cares anymore. So sad.
Not at all....well piccata is a fast one pot dish, great for the line. I'm sure you have a flat top. Cut the lemons in half sprinkle with sugar and load them on the flat top. :)

Thank you, Cut the potatoes about 1 cm-thick. Saute in olive oil on a low - medium heat until cooked through and golden brown then season with salt.
