Here is how to make tasty macarons
### Ingredients:
- **For the Macaron Shells:**
- 150g almond flour
- 150g powdered sugar
- 110g egg whites (aged, preferably at room temperature)
- 150g granulated sugar
- 37g water
- Gel food coloring (optional)
- **For the Filling:**
- Your choice of ganache, buttercream, jam, or any preferred filling
### Instructions:
#### Making the Macaron Shells:
1. **Prepare Baking Sheets:** Line baking sheets with parchment paper or silicone mats.
2. **Sift Dry Ingredients:** Sift together almond flour and powdered sugar into a large mixing bowl. Discard any large pieces that remain in the sieve.
3. **Make Meringue:** In a separate bowl, beat the egg whites until foamy. Gradually add granulated sugar while continuing to beat until stiff peaks form. Add gel food coloring if desired and mix until evenly colored.
4. **Macaronage:** Gently fold the almond flour mixture into the meringue in three or four batches. Use a spatula to fold and press the mixture against the sides of the bowl to deflate the meringue. The batter should be smooth and flow like lava.
5. **Pipe Macarons:** Transfer the batter into a piping bag fitted with a round tip. Pipe small circles (about 1.5 inches in diameter) onto the prepared baking sheets, leaving space between each macaron.
6. **Resting Time:** Tap the baking sheets against the counter to release any air bubbles. Let the piped macarons sit at room temperature for 30 minutes to 1 hour, until a skin forms on the surface. They should not stick to your finger when touched lightly.
7. **Bake:** Preheat the oven to 300°F (150°C). Bake the macarons, one sheet at a time, for about 15-18 minutes, rotating the sheet halfway through baking. The macarons are done when they are firm and have developed feet.
8. **Cool:** Remove from the oven and let cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
#### Assembling the Macarons:
1. **Pairing:** Match macaron shells of similar sizes together.
2. **Filling:** Pipe or spoon a small amount of filling onto the flat side of one shell. Gently press another shell on top to sandwich them together.
3. **Resting:** Place the filled macarons in an airtight container in the refrigerator for 24-48 hours to mature. This allows the flavors to meld and the texture to improve.
4. **Serve:** Bring the macarons to room temperature before serving for the best flavor and texture.
### Tips:
- **Aging Egg Whites:** Separate the egg whites and leave them uncovered in the refrigerator for 24-48 hours before using. Bringing them to room temperature before whipping helps achieve a stable meringue.
- **Consistency:** The macaron batter should be thick enough to hold its shape on the baking sheet but still flow enough to settle into a smooth surface.
- **Oven Temperature:** Every oven is different, so you may need to adjust the temperature and baking time slightly to achieve the perfect macaron shells.
