    We spent 3 months in Rome last year. We lived 5 minutes from da Michele. It was our “go to” place. Never had a bad meal there! We are returning in September. Non vedo l’ora!

    Was so lucky to be there in the spring time many years ago and tried carciofi alla giudia...life altering. It didn't matter where we went in Italy...Rome, Venice, Amalfi, even the tiny little cafes had the most wonderful food. Along with the artichokes, the other dish i just can't forget was a seafood with squid ink pasta in Venice...OH...and at a little cafe in, i think Positano, with fresh pastry...the sfogliatelli was nothing like I'd ever had in the States...100 times better, amazing.

    Question for Jessi: since I’ve been married to a French guy forever who speaks absolutely perfect English & we live in the US, I have had to study French really hard to be able to function alone in France. I’m probably at the high intermediate level. I’m curious about your Italian level & ability to speak, travel & comprehend Italian on your own. Have you taken intensive classes?

    Love this restaurant and its simple and local feeling. While the prices are not as cheap as a few years ago, the portion sizing is far more than anyone at the same price point, and their dishes taste great! I look forward to going back and trying more dishes. I was surprised at how great their suppli was - despite being so simple!

    When you were wondering what the spice in the trippa was I yelled at my computer screen "Mint!" Make it pretty often in the summer when my Boston area backyard is overgrown with mint.

    Never been to Italy, but of Sicilian background. My mother made us tripe and I loved it as a child. I never learned to make it ( she died too soon) but it's a dish I miss. Family bucket list is to visit Sicily.

    A Roma quelle polpette ripiene di riso si chiamano "Supplì al telefono" perché la mozzarella col calore si scioglie e diventa filante. Un volta i telefoni avevano il filo.

    Parmigiana looks so yummy and all the dishes in Rome are small dishes and portioned very well. I'm not a big fan of Eggplant but, if I ever were to go to Rome, I would definitely try that.

    Everything looks so wonderful. Great recommendation. My mom made eggplant parm only flour and eggs, no breadcrumbs. Said the breadcrumbs too up too much oil. Made it that way for years but now I just use plain eggplant. However, I will now slice my eggplant very thin. Great tip!

    I am currently reading Storia della pasta in dieci piatti by Luca Cesari, and from your videography and description, this restaurant has rendered the pasta dishes according to the currently received authentic rendering. Pasta was usually just maccheroni boiled in water (or sometimes broth) and dressed with grated pecorino or parmesan,

    We will be going to Rome in the not too distant future - will definitely put this on our list. Always so hard to know where to go for an authentic experience when you are a tourist, so this recommendation is very much appreciated.

    Yes there are lemon balm leaves in the Roman tripe sauce, that's why it's so aromatic! It's a real delicacy

      I was going to suggest maybe they used mentuccia, which is also
      used in the artichoke dish Carciofi alla Romana. In English it is called lemon balm.

    Ciao ragazzi... Vi consiglio di farvi le lasagne alla parmigiana. Non è un piatto leggero, no! ma è sempre un successo quando lo preparo... Fate gli strati normali per una parmigiana e prima di ricominciare, uno strato di lasagne (e in basso si comincia con sugo e sopra uno strato di lasagne) ... Enjoy ❤

    My oldest daughter and I recently returned from a 10 day tour of Greece and Italy. We could have spent much more time in Rome and Florence. I'm also still dreaming about this pistachio pastry I had in Naples. I'd go back just for that! 😆

    Amatriciana is by far my favourite „Roman“ signature dish, however only the way like it’s made in its birth place Amatrice. Use thick Spaghetti like they do there, it enhances the whole dish, use white wine, peperoncino is not optional, and guanciale from Amatrice, if you can get it.
    Bucatini go well for a lot of Sicilian dishes but Amatriciana must be done with Spaghett(on)i. Btw, if Carbonara, it’s also ten times better with Rigatoni. But I recommend either Gricia or Pecorara instead. Thank me later.
    Trippa alla Romana requires mint (same goes for trippa finta which is one of my favourite lunches).

      They are all doable at home if you have the right ingredients. Just follow some italian cuisine channels, such as Pasta Grammar, Vincenzo's plate, etc, and learn the proper way. Not impossible, not even too difficult. 😉

      I love frying zucchini blossoms. The only downside is that, if you take the blossom, then you don't get to enjoy the zucchini gourd.

    Really enjoyed that and will visit the restaurant next time I'm in Rome. And Jessi made me laugh as I thought when she put her hand by her ear and moved her hand like that, that she was making an interesting Italian hand-gesture that I hadn't seen. Of course, it was a fly. LOL!

    My mom was from KY and would cook the hell out of the eggs and use Tennessee Pride breakfast sausage with Kraft parmesan cheese. We LOVED it. I'm all grown up now and yes, the Roman way is delicious. All types of carbonara are marvelous.

    Having just been there with my wife after seeing this video the pane focaccia on the menu is just pane and translated to bread on the English side definitely get it also this video shows off the pasta here the pizza is equally beautiful also if you like anchovies 1000% get the stuffed zucchini flowers ❤ best we had in Roma

    Yep. Trippa alla Romana does indeed traditionally have Mentuccia (Roman Mint) in the sauce.

    Wish I'd seen this before our 2014 trip to Rome, Lol. The Parmigiana reminds me a little of Moussaka but without the bechamel and cinnamon. Delish! Thanks for the sampler, guys 👍👍 P.S. Jessi, take Alessio to Owensboro, KY for the barbecued mutton. It's renowned in the BBQ world and not that far from Nashville.

    Probably they used the "mentuccia romana" as a herb for the trippa, it's a must in the original recipe as they say in Rome ☺ My favourite? At the moment the gricia!

    I once visited Scotland and they served me a carbonara which they insisted was authentic and everything I would want in a carbonara. Plus haggis.

    I love carbonara! Luckily we can buy everything in Paris at an Italian store I have been going to for over 30 years.
    My son-in-law is Italian. His family moved to the US when he was five. Unfortunately, he speaks more Spanish than Italian. He and his brothers have a pizzeria that is constantly busy.
