    I rescued a pecos smoker from death at academy sports. Paid 50.00 for it .
    It was left all year outside for display and then in the back lock up boy was it rusty .with a little elbow grease and some weld bead stacks on bottom of fire box to thicken it up it looks and flows great . I have smoked a lot of meat in it

    Excellent mods. I bought one last week. Doing the mods before first cook. Blessed with a MIG welder for building a box and second shelf. The most important point I took away from this video was the hear shielding on the firebox to protect the lid from excessive heat. I will buy some 1/4 inch x 4 inch steel this week to make the mods and finish out the heat deflector in the bottom of the smoke chamber.

    I've got the same grill, after the mods; lava lock, fire basket and heat diffuser it cooks great. Well worth the money

    Amen brother! Had the Wrangler and had to sell it during hard times. Would love a Yoder etc, but these are the best for the money. Some flaws as your box store smokers do but SO much better...

    Haven’t done any mods to mine yet. I am still pleased with this smoker. I do, however, appreciate the idea for the heat shield in the burn chamber. I do wonder how that will affect the flat pot and pan surface on the burn chamber lid?

    I've got mine running with the baffle plate removed, a stack extension ( I think it's sitting at 32" or 33" total now), gaskets, a different grate for the fire and 6 firebrick in the bottom of the fire box. Next up is some metal for the firebox lid and toying around with the idea of cutting off the stack and adding a smoke collector. My advice to anyone buying one is to examine the welds and fit and finish. Namely, around the door edges. Some of the flat stock on mine where the door meets the bottom is about an 1/8" low. Some of them will have gaps between the flat stock in the top corners. All in all, for the price it's a great smoker.

    Hey Joe. We've been down similar trails. LOL I really like your deck. You did a great job on the walkthrough of the Pecos. I didn't see that one when I bought my $1500 Texas Original. Mine is a nice pit, but there is not a $1k difference in the two pits (IMO). I've got pretty much the same setup, but for $1700 with the addon accessories I had added. Anyone wanting an offset pit should look hard at the Pecos at Academy Sports, especially for that price. Great job.

      Hey, Phil thanks for watching the video, Phil I have had a lot of smokers in my time, that were high end smokers, and I have found out if you find a pretty good smoker, and do the proper modifications to it , you can have a pretty decent smoker for a lot less money. thank you about the deck, I will in future videos show a better picture of it set up with all my toys.     Joe this video was very helpful and you did excellent. Now you are as good as most of the people on RUclips. Of course there are the pros but they just have a natural ability to be on camera, but for the home video guys you did excellent, I am very proud of you. You even taught me several things that I never knew about and that is what RUclips is all about.

    Question.. I have had my 18.5 WSM for years... cooks great, but some challenges over the years with multiple ribs racks, etc. How would you compare to the WSM? Been debating if it is time for another smoker. The WSM holds up great in the rain and no hassle with a hanging grease can. Do you have a video? In case I missed it? BTW I also have a Blackstone (NG connection) I love that thing!!!!!

    hi joe , love the vid. just bought a pecos,,, i dont pal on using the grate that comes over the fire box but i noticed a weld deficiancy in the the corners,, do you think that would be a problem if i did decide to use it or chalk it up to the personality of the smoker ???

Now to your question, Paul you can buy some high temperature RV sealant, it works perfect, and if you see any other places when you are smoking, that smoke comes out of where ever you see it, put the sealant on that spot.     What do you think about the plate where the heat first comes into the main chamber. I was looking at this smoker at academy last week. And I just don’t know if that plate is a good idea , since it shoots the heat down and then it has to rise up and then go back down to go into the exhaust pipe . Just my opinion. I’ve seen some videos where the plate is grinded off

      You can actually buy an Oklahoma joe charcoal box at academie for 40 bucks.

    Very Detailed review/demonstration of the Modifications you made. I used to have a smoker that had a Firebox connected to a Vertical cooking chamber but it was not constructed that well and at the time I did not really know how to correct the issues I was having with it. I would like to know your thoughts on a comparison between your Pecos and your WSM. Also have you seen the gateway rack for the WSM that allows you to hang meat in the WSM. as always Great video Joe, BBQ On!!!

      I would say that the wsm would be a lot easier to use in starting to learn how to cook BBQ, because it's easier to control the heat better. The Pecos offset is a little harder to use because trying to control heat. But once you learn how to control the heat , In my opinion you won't find a better smoker for the money, it takes a little bit of getting used to.

    I realize this is 4 years old video but something I don't understand. The reason you go with an offset smoker is to burn wood not charcoal. You have the Weber Smoky Mountain smoker of there is you want to cook with charcoal so why would you burn charcoal in an expensive offset. Space is the only thing I can come up with since the Weber is limited.

Man I sold that smoker, but I will tell you if you do the modifications to it like I did you can have yourself a awesome little smoker, for the time that I owned it it cooked to perfection, and for what you pay for the smoker is fantastic, you can't beat 400.00 dollars for that smoker, but I went to buying the Lone Star Smoker, which is a lot bigger and holds more food and for what I payed for it was amazingly cheap for what you get, I bought the 20x42 offset which is 1695.00 and I absolutely love it, maybe you need to watch my video that I did on the Lone Star and maybe you will change your mind, but for the little money extra it for sure is well worth it my friend, it is built like a tank.If you have any more questions please let me know.       My friend did it for me he just tack welded the 3|16 metal plates to the lid side by side.

      I never did see the 1|4 wrangler the ones that I saw were about 3|16 of a inch.

    I’m working on beefing up the metal in the firebox now. Taking out the baffle plate and opening the smoke throat between. Going through way too much wood

    Nice video! Looking into an Old Country Wrangler, as I heard they started making them with 1/4 in steel again not found at Academy. But I am reading that control your fire with the amount of fuel and keep you doors wide open for good light smoke. Never have smoked a piece of meat yet just reading stuff... Your method does seem that the fire will last longer and therefore less maintenance. I am trying to stay away from charcoal smoke. The basket is cool. I am really digging the metal plates you welded in the fire box.

If your are cooking for a party you might want to go the Pecos, only because it has more room, but as far as the metal the Pecos is plenty thick enough for what you will be smoking , you really don't want to cook any higher than about 275 degrees on any kind of meat, and as far as the tasting charcoal you will not taste any only the wood flavor, if you do the modifications on the Pecos you will have one heck of a smoker, if you have any more questions please let me know.       @@SmokinJoesBBQ Already subscibed buddy. The pecoscould do it. Though thinner metal and longer, but twice the cost. The wrangler heavier and seems to have more cooking space, shorter but wider. A hard decision... cost is a factor. As a technician kind of guy, I am drawn to the heavy metal.. What to do?

      I saw yesterday they have the Wrangler with 3/16” steel doors but have not seen the 1/4” in the Wrangler. Where did you see the 1/4” Wrangler?

      Have not seen any 1/4 steel. I heard it through a thread. Not sure this is true and I can not get any answers from bbquepits.com where I think they are sold...

    I want to ask you a question I just bought one this past weekend but I really want to do the fire box lid mod how are those on the lid? Is the flat stock spot welded on to the lid or is there a gap between the flat stock meaning they are welded together before mounting with some studs behind and the studs are welded to the lid? I can’t tell from the vid thanks for the ideas

      HEY ROY, thanks for your support that really means a lot to me and I really appreciate you so very much. Roy all it is, is we welded 3/16 inch steel plates side by side and tacked them in at the top and bottom, and it works perfect, but I would for sure do it because if you don't you might have some heat problems.       THANKS ,for watching my video that means a lot to me and I really appreciate you so very much. Yes I do BBQ under my over hang but is is made out of wood with a brown stain underneath it. It is maybe 5 feet from the top of my stack to the bottom of the roof, but there is really not a whole lot of real hot temperature coming out of the stack, so far there has been no stain from the smoke, if you have a stain problems put something up where the smoke comes out that would block it.     Hey brother, I'm about to be getting me a pecos in about a week or so, so I've been looking at different mods. The way you made the baffle plate makes more sense to me. I have been watching different videos and seen a lot of people removing that baffle plate completely, which seems like it gives you a pretty good hot spot right by the fire box. Since you've been cooking with these mods are you able to use 100% of the cooking area? And is there much of a difference as far as finished product from cooking meat on one side compared to the other? Apologize for the questions just picking your brain!

    Nice walkthrough & mods. I’m just curious though why you use charcoal in an stick burner? Why not just use the WSM? Also, how long have you had you Pecos? I’m thinking about getting one, just to play with until I feel like dropping real money on a higher-end offset.

      HEY RALEIGH, thanks for your support that means a lot to me and I really appreciate you so very much. You can use a stick burner two ways, one just using straight wood or what is called the minion method which means that you put in the charcoal and light up some charcoal and put it on top, and surround your lit charcoal with some wood or wood chunks, and it burns down slowly and gives you a supper long cook. I do the same thing on my WSM. I have been BBQ for 25 yrs and I have had high end BBQ and to be very honest they are over rated. I have had my Pecos for 2 yrs, and if you do the mods like I did them you will have a awesome smoker for a hell of a lot less money. My smoker cooks fantastic just like the high end ones do.       I almost always at least start my fire with charcoal. I find it easy to do so with a chimney starter using lump charcoal. I arrange my fist set of oak or pecan logs in a sort of log cabin shape and pour the burning coal into the middle. After about 30 minutes or so, it makes a real nice smoke. Also if I wrap my meat, such as with a brisket, I will sometimes switch to charcoal or even lower quality wood because the meat is through smoking and all it needs is heat.
      Furthermore, the Pecos has a grill inside the fire box. If am cooking something that needs a good sear I use lump charcoal. I try to find mesquite charcoal for this. Steaks, burgers, fajitas all get cooked over charcoal in my fire box.

      @@ramirezcarlos1990 I had a welder friend of mine make it, it is very simple to make, if you know somebody that welds they can make it for you. If you do the things to your smoker Like the video shows you will have one hell of a smoker.       Thanks Mike, that was one of my first videos I was very nervous at that time but the modifications that I did turned out a hell of a smoker for having very little in that smoker, since then I sold that smoker and ordered the lone star grill, which will be in on Tuesday.       HEY, CHRIS I had my friend do it for me, he put the new rack in , and the charcoal basket, and the temperature plates also. I used the original charcoal grate in the fire box and put it in the cooking chamber, beside the deflector plate. If you do these modifications you will not believe the difference in temperature, and the way it cooks better. They are a great little smoker. The big deflector that you see in the chamber is actually the charcoal grate, but most guys get another grate for the charcoal and use the one in the fire box for a temp plate and the little deflector's plates are just made out of steal and you can go by a steal place that carries steal and have them cut you some to fit your cooking chamber.     I don't understand how you use the minion method in a stick burner where you're burning fully combusted wood and I especially don't understand how you keep a 20 in. Stick burner hot using the minion method and wood chunks. So you're using smoldering smoke in a stick burner?

Since I did the modifications on the Pecos it has been the best smoker I have ever had, and I have had a bunch of some high end smokers, but I an supper happy with this one, and It maintains good temperature all the time, there is maybe a 3 degress difference between both sides, which is fantastic for a store bought smoker. I have a Yoder pellet smoker which I like also, but there is nothing like a stick burner smoker. If you have any questions get in touch with me, on this video. THANKS AGAIN. I had a welder make me the top grate, it is really easy to make, just get a welder to get some angle iron and some mesh and weld the mesh to the angle iron, and it is that simple.     I bought the Brazo and love it. The main thing that concerned me is your smoker being on your wooden deck, looks like a fire hazard to me??? Just my first concern. I start very small fires and gradually bring up the heat. I spoke with the people at Old Country and they told me it’s not good for the metal to get a big fire going, which I think you will have with a basket full of charcoal.

    ok ok ok. I don't want to sound like a snobby Texan, but you definitely mispronounce the name Pecos. I am not talking trash or anything, so please don't take this the wrong way. The name is pronounced PAY-COSE. You are free to say it how you want obviously, but PEE-COSE is not correct.
    Nice mods by the way. I have a Pecos and I also welded in a top rack. I actually talked the guy at academy down to 300 dollars when I bought mine. The Pecos is the best pit in this price range for sure. Thanks for the video!

      So, I am even kinda wrong here too. If you hear the way a lot of people say it, they say PAY-CUS. One of my best friends is from Pecos county and even named his son Pecos. He says PAY-CUS. I probably do too after a few beers and my accent revs up. Like I said though, say it how you want. I am sure if you drop me into Tennessee I will mispronounce all kinds of stuff.
