once l've done all this setup and then ride 10 minutes to the shop , l turn off the bike go into the shop , come out get on the bike , turn it on , has it now lost all the programming l've done and reset to factory setting and l have to do all that again every time l turn off the bike ?
oh my god, could they possibly make it more complicated if they tried!, halfway through the explanation my brain went into overload, on the bmw 800gs they have a button on handle bar with abs written on it, press once to turn abs on, press again to turn off, done.

So will that rider mode stay set to what you've made it? I.e., rain+road?
Yes as long as the battery remains charged and connected. I believe custom conifgs are lost when the battery is disconnected.
Can you explain what each of them actually do? Please.

This process is not to turn on or off ABS, it is to customize a specific rain mode that controls partial ABS and TC when riding on wet roads.
I would prefer to learn Polish. Imaging changing modes in the rain on a dark night.
