    My favorite is a giant sweet potato with a mango bean salad: 1 can o beans, rinsed and drained; 1 mango, cubed (I use frozen from TJs); 1 sm red onion, diced; 1 bunch cilantro, chopped; 1 fresh jalapeno, chopped; lime juice. Yummmmm

    As a McDougler, I LOVE potatoes so it's great to see you now happy to eat them again. My fave topping is caramelised onion hummus and salsa. I eat it most days for lunch with salad. I'm really pleased you decided to start your channel, all your videos are brilliant as are all your tips and recipes. Thank you x

    One of my favorite things to put on a baked potato is marinara sauce. I also like to put succotash (lima beans and corn) on them. Love you guys -- P.S. I also like to smash the potato on the plate so it is not a pocket but a flat field to put the marinara or succotash on. I then use a knife and fork to cut through the potato -- it's just easier for me. hugs -- Well I just keep thinking of more stuff! I also like to steam my potatoes with onions. They are not so dry that way. I have also cut potatoes into large strips (like home fries), steamed them for no more than 5-7 minutes, and then air fried them. They cook really fast and crisp up rally nice with soft centers. MMmmm, just the way I like them.

    my Mother passed away in an accident in November. she was all about health and i never listened til this passed year. my husband and started out health journey and went vegan. im sitting in a parking lot looking up vegan loaded potatos when ypur video came up. my mom LOVED your videos. so now im sitting here crying but maybe it was a sign! she was always sending me your videos. so thank you❤💜

    I love changing up how I top my baked potatoes.
    Refried beans, salsa, avocado, "grated cheese", sour cream or a nice cashew cream or something similar.
    Chili, "cheese", avocado, sliced black olives, fresh bell peppers, sliced green onions.
    Caramelized onions, caramelized garlic, sauteed veggies (bell peppers, mushrooms, broccoli slaw, coleslaw, zucchini, eggplant, and spinach) with a tahini sauce (tahini, garlic, ginger, ginger stem marmalade, soy sauce, lemon or lime juice and zest, pepper and a pinch of Chinese five spice. Also great to marinade tofu in)
    Or just top the potato with chickpea salad: chickpeas, onions, bell peppers, tomato, cucumbers and a splash of olive oil and red wine vinegar. (Or your choice of dressing)

    Dude. Brian. ROFL I love your announcer voice man. Very well done on this one, had to watch it several times.
    I'm with you on the cool hummus and the warm/hot chili-matter of fact just today I had a hot baked sweet potato with ice cold homemade hummus and it was outstanding. I can't wait for the chili recipe vid!
    I got a fever, and the only prescription, is *more announcer voice*!

      @@KrocksInTheKitchen Yeah I know from the calendar vid that you're in broadcasting. It suits you and I love when you do that voice, it lends itself to a very dramatic sports showdown but it turns out to be a recipe/kitchen video and the juxtaposition is awesome.

    I like to chop and parboil my potatoes, then then bake them until the outside is crispy. I toss them in garlic and herbs before baking. Top with hot sauce and Kite Hill brand unsweetened plain almond milk yogurt.

    You can make a sour cream from soft tofu, cashews, ACV and/or lemon. Also, bbq jackfruit is good too.

      I use soft tofu to make caeser salad dressing: soft tofu, lemon juice, Dijon mustard, minced garlic, capers, pepper, salt, and I always add nutritional yeast and garlic powder to mine. So delicious.

      Make sure the tofu is room temperature and not cold tofu. You can find it in the asian section.

    I eat a lot of potatoes. My three favorite toppings I rotate through for variety are ratatouille, thick split pea soup, and for real convenience - open cans of black beans, corn, and diced tomatos and use about 1/2 of each can with some Mexican spices sprinkled on top.

    Yum . Those potatoes look so yummy. Nom nom . I like to add houmous with other raw veggies on my potatoes. I also make an aubergine dish in tomato sauce which is yummy as a topping too. But like u, I use beans and legumes too.

    Hi, just found and subscribed to your channel. You guys are fantastic! I started a WFPB no SOS lifestyle almost three years ago when I was 66 and have not looked back.     I like chili on my baked potatoes too. I also like pickled sliced jalapenos, hot pepper flakes, salt & pepper. Nutritional yeast and garlic powder are good also. If you're adventurous, try Sauerkraut, mustard, and ketchup on top of the chili.

    I have to tell you that I did potatoes for 2.5 days because I was so motivated by your changes. I can’t imagine 2 weeks. But those 2 days were the perfect reset for me. I have now been eating nutritarian for 2 weeks and I love it. I have been obese for over 10 years because I hated counting calories. Thank you for sharing your story and being an inspiration to this fat girl.

    I saute bell pepper, onion, yellow and orange peppers and sometimes mushrooms and use that as a topping for the potatoes. Also, steamed greens (kale or chard, or collards).

    My favorite way to eat potatoes: I head of broccoli, hemp seeds, 1/2 bag mixed vegetables, coconut bacon, cashew cheese or hummus, and oil free salad dressing. I cut everything until it looks like a casserole. It's so good. I eat nearly every day during the school year

    Hmm...smoky hummus on chili - I might have to try that out. Here's a tip for a chili shortcut - use salsa instead of chopping garlic, onions, and peppers. I figured this shortcut out a few years ago and it saves me so much time! Sometimes I'll go ahead and add extra onion anyway, but I use a chunky salsa and it works great! I also use pinto, kidney, and black beans as well as corn for color variations in the pot.
    Yesterday I had sliced baked potato with vegan cheddar and mushroom gravy - inspired by poutine that my Canadian friends talk about!
    As always - love the videos.

    I love BBQ lentils on sweet or regular potatoes. Sometimes with black beans too. I think adding hummus would elevate it as well.

    Some spices I have used along with leftover steamed veggies on baked potato are garlic, basil, pepper and even a bit of spicy brown mustard.

    I roasted a variety of veggies (broccoli, cauliflower, zucchini, bell peppers, onions, & mushrooms with different seasonings) and put them on top of potatoes. Simple & delicious

    I like to scoop out the potato and mash it with mixed chopped cooked veggies.. load it back into the skin and top with a sprinkle of vegan Parmesan!

    Years ago I had some friends that gave a potatoe potluck. They cooked several pounds of potatoes in their pressure cooker and everyone else brought their favorite toppings. This was always the best turn out. Everyone got to experiment on different toppings. I really miss those potlucks.

    I've been following you two for awhile now, and was inspired to start the "Eat To Live" food plan. I was really doing pretty well, but my typical barriers have kind of kicked in. One, I hate to cook so even preparing foods and having things ready to go can be overwhelming, and I'll fall off the wagon because I don't have things on hand when I'm hungry. Two, I'm single (living with my daughter and son-in-law, which is wonderful but challenging around sharing the kitchen time). So, I fell off the wagon big time and am trying to get back on the wagon. I need the support of people who are single and hate to cook to see what they have done to overcome these barriers to staying on the plan. Hugz to both of you. Keep on sharing your journey. Judi

    Both look great.
    Here are my picks for topping.
    Broccoli cheese sauce (vegan cheese sauce of course)
    Cheese sauce, vegan sour cream, and any bacon substitute (coconut, carrot, or eggplant) green onions. Like a traditional loaded potato just vegan.
    Sweet potatoes are also great. Stuffed with black bean chili with corn and red peppers.

    I love baked potatoes with home made chili and avocado on top. The cold avocado with the hot chili is awesome. Avocado doesn't really have a flavor, it has a creamy texture like butter or sour cream but plant based.

    you two are adorable!
    i usually get baked potatoes at a restaurant with a salad bar or buffet and load mine with any vegetables and salad, hot sauce and salsa over everything. at home i use juice from my fermented pickles (i use very little salt when i make them) mixed with a little almond milk as a dressing, and i chop every vegetable i can imagine being in potato salad over mine, i especially like zucchini, peppers, onion, celery, dill, artichoke hearts... dandelion greens if they're tender in the spring.

    I really enjoy a plain potato topped with southwest spicy mustard. I eat that often when I'm on the road. Steamed broccoli and garlic powder. Salsa. Tofu sour cream is good.

    Try Miyokos European style cultured vegan butter. It is awesome! It melts like butter. Tastes like butter. Looks like butter.

    You can make a super topping for baked potatoes of cottage cheese blended in a blender with a couple of spoonfuls of olive oil, then mix with a package of onion soup mix and let it sit in the fridge for a few hours. It's like a sour cream dip but very low in calories. You could leave out the oil if you want to be really hard core.

    Broccoli and dairy free cheese sauce. Roasted seasoned chick peas. And more herbs! Fennel greens, dill, cilantro, basil, oregano, etc. More herbs = more flavor.

    Mexican veggies! Water sauté onion, garlic, red, orange and green peppers, summer squash, etc add Mexican seasoning(SOS) free of course. I make my own seasoning mix. If your looking for some fast SOS and nut free sauces Well Your World just came out with a bbq, curry, Asian, etc. They’re sold out right now, but will come back in stock.

    We just discovered you guys! Thank you for all you do! I've made your smoky hummus and my husband, said it was the best hummus I've ever made. This week I switched out the liquid smoke and paprika for roasted red peppers! Very good too! The grilled onions in this video sold me on buying the Griddler! You both are so good together!     Love your channel. I'm in MO too. This is super simple but...I cut my potatoes into small cubes and put creole seasoning on them and if I'm feeling sassy, add nooch. It's like chilie cheese fries. Then you can pour your toppings over it.

    I love cold coleslaw on hot baked potatoes. I think jack fruit "pulled pork" would pair well with the potato and coleslaw.

    Spicey brown mustard is actually pretty good. And chili is great on sweet potatoes, too. The spicy & sweet work well together.

    I water sautee any vegetables I have broccoli, carrots, onions, bell peppers, squash onions Etc. And then use a homemade Caesar vegan dressing like a sour cream and top it with sliced fresh tomatoes.

    Looks so yummy, after watching the queso video and this one, I had to look up where to find that brand in my area! Do you guys eat avocado?     Okay, so back to the loaded potato. I haven't been that adventurous, but I like the chili idea, and the hummus on top. I'm gonna try that. Usually I just make vegan gravy, there are so many variations. And I have put my sauteed veggies on there with a little of that reduced balsamic vinegar. I have to re-commit to the potato. I set the date for July 1. I'm going to do the 30 day potato thing. I have to get some weight off and get my cholesterol down, and I wasn't doing it seriously or religiously enough. (OMG - wish me luck!) I'll let you know how it goes.

    I just found your channel. I enjoy your camaraderie. I would probably put broccoli and salsa on my potato but I would definitely like the toppings you guys choose as well.

    Anything chickpeas goes really well with potatoes. I sometimes make a gumbo (that's what the recipe book sais it is) red peppers and crushed tomatoes cooked together. How about a Taco-tater? I'm thinking bean chilli-thing with taco seasoning and lettuce and salsa and maybe some cashew cream. Ohoh and jalapeno slices. Now I'm hungry!!!

    You guys remind me so much of my marriage. I would totally put potatoes straight on the oven rack, and my husband would insist on a baking dish, and the hummus and chili combo is soooo Brandon. We made vegan Pizza and he used hummus as the sauce. I thought it was weird but he’s just a hummus guy lol. I’m so happy y’all loaded those potatoes up. The possibilities are literally endless. Final comment, I would definitely try homemade cashew cheese, I finally made some and it’s easier than I thought it would be, and really good, also a lot of ways to make it your own by adding other ingredients. I did more of an “Alfredo” style but I’m hoping next time to do a nacho style. Btw cashews are randomly so much more expensive than other bulk items. That’s why I am doing it all one recipe at a time. :) you guys are awesome. Peefs little potato is adorable.

    My favorites are black bean and corn salad, salsa, broccoli with sauteed mushrooms, stir fried veggies in garlic sauce, and taco cauliflower with salsa.

    I am loving all these ideas! Been away and now it's too hot in New England for baking potatoes, but those grilled onions... I am trying those for topping a multitude of dishes!! Looking forward to Brian's chili recipe!!
