Overall I am very impressed with the work you put into this some parts are just not as realistic as I expected like the meteors hitting the water and turning it into a lava they dissolve once they hit water because most meteors are made of a special acid in the rock

If the Moon hit the Earth.
Well. There'd be no Earth left.
The Biggest Asteroid known as Ceres would have turned the Entire Surface of the Earth into Lava and also make A Crater so Big that Half of the Earth will Cease to Exist.
And the Size of Ceres is only 473 Kilometers in Diameter.
The Moon's Size is 1,737.4 Kilometers in Diameter
That's Over 3x as much as Ceres's Size.
That's why there'd be no Earth.
Ceres would only have turned the CRUST to lava, the crust is basically nothing compared to the other layers.

Actually the moon will slowly be ripped into pieces, starting from the side facing earth. Oh and I think the gravity between that side of the moon and the side of the earth that is facing it will actually slow the spin.
Normally the debris will be a ring, but in this case, since the moon is falling, It will make contact with earth before it gets completely destroyed, with meteor showers and asteroids all over the place.
A huge tidal wave will wash away everything. The resetting of earth will take a long time, and since it doesn't spin anymore(If assuming that the moon hit the right spot as the right angle) It would be a hellhole. Only a strip of land may be habitable, and I don't know if it will, since earth coliding with something a fourth of its mass surely will change the atmosphere completely.

Great job! Its just unrealistic. For example, the water will evaporate if it gets to hot, not turn into water. Also, without the moon, the tides will be crazy. It will be anything BUT normal.

Well technically the closer the moon gets the higher u can jump bc the moon makes the earth more and more teared apart as it gets closer and there's a force line so when the moon hits that force line then that's when the moon also starts to get teared apart and that will cause earthquakes,volcanic eruptions, tsunamis and breaking the earth as well so the moon would break before it would hit the atmosphere of earth

According to kurzgesagt the roche limit is true, and also the moon didn't actually hit the earth, it just kinda explodes miles away from earth and makes a ring of rocks and now there is some meteor shower across the earth (moon dust), but he is pretty right about "boiling" the ocean but it's not lava the water will just evaporate, and probably disaster would come and rebuilding civilization will be very very hard, it could be cooling earth or making it hotter, and yeah the earth will go, idk but the evaporated water means there is no fishes or sea animals, probably those animals in the future generations will have legs and go to land a live, future generations (humans) wouldn't know fishes exits. (i don't really know probably someone knows)
Edit : probably there is some peoples that survived and also peoples will make new civilization, but minecraft is pretty far to projecting the real thing, also there is some things that made the earth stretch from before making the volcanoes erupt which is pretty nice details, and also the moon streches why is in still in the same shape? i dont really know, but good job making ot :D
