The fact that you have to select “high resolution photo” and select “Transparency” and then futz around with more settings just to get something remotely passable for a 1-color simple logo says all you need to know about the state of Image Trace at Adobe today. It would have been faster to draw it by hand with the Pen tool.
I would agree that Illustrator's image trace has always been pretty hit and miss. I'm glad they are starting to address some of the issues, and hopefully, they will continue to improve it. Thanks for your comment 🙌
