The feature that shuts it down if it’s too cold is super important at the camp in my state of Maine. I’ve had to be careful with my other 200 ah lifepo4 battery. And the price is right!
They also have a model with internal heating.

How many of those would I need for a 10x16 Walden cabin with a Alpicool fridge/freezer and a swamp cooler?

Sounds like that might be the charge controller that I get. How would I hook up solar to that?
That is an AC to DC charger. You can charge from a generator using that. For solar you want an mppt power controller between your panels and battery. Both can be connected to the battery at same time.

It works fine off my 1200 watt genny.

If the controller fails, is the battery still usable?
I can't say for sure but the monitor should not affect the battery BMS operation if it fails.
