Shidou was probably the best pick because Shidou has no synergy with the other Blue Lock "strikers" but that doesn't mean he won't have synergy with an actually "midfielder". Sae did say that he is waiting for a competent striker than can actually score with his passes. So Shidou is honestly the best pick.

Don't worry, there will be subs because it's a real match, so there should be about 11 players on the bench, so I don't know if there will be 3 or 5 substitutions, it depends on when this was done in the manga.
The other players like Barou, Reo, etc. are not excluded from the match. They are subs for the game against the sub 20.
