    AWESOME!
    Carter...I wanted to thank you for sharing the videos of canning meat. All of the jars I've canned up have been such a game changer while being sick. The dry canned ground beef is so different than the water canned. I will be doing many many more soon. Made spaghetti sauce yesterday using a jar of the ground beef and my husband raved and raved about how delicious it was!.
    Our poor garden was mostly a flop because of being neglected. I waited and waited for tomatoes and all that really did anything were cherries. I guess the rain ruined things also. So so so much rain! :( I'm not feeling better and have appt with a specialist in a couple of weeks. BUT, I'm still doing things when I can!
    Thank you Carter and thank you too all the ladies and gentlemen sharing there canning projects. It's so enjoyable seeing what everyone is up in their kitchens!!

    Hi Carter, you're such a great inspiration. I've just started pressure canning. The first day I was so scared about the pressure and my bottles shattering in the canner. I kept watching my clock and was so relieved when the alarm went off. I canned some smoked turkey which tasted awesome. The second time I was so much braver with no ounce of fear at all. Everything went well

    Thank you for sharing your videos, Carter! I really enjoy your style. I have made what I just call roasted tomatoes for years. I ordered 15 pounds of San Marzano varietal plum tomatoes from a California grower. I then cut the tomatoes into 1/4"-ish slices then mix with thinly sliced onions, olive oil, and salt. Toss all onto parchment lined 1/2 sheet pans and then roast in the oven at 275F on convection for a few hours. Delish. Use those in bacon sandwiches (dispensing with the crunchy water also known as lettuce) and in salads or just to eat from a bowl in January. 15 pounds makes about 6 half-sheet pans for further stowing in portions in the deep freezer.

      Linda, they sound amazing! I'm dying over the crunchy water! Hysterical. When you make a salad, do you start with a bowl full of crunchy water, or do you use other greens for your base?

      @@growandpreserve 😁 I use cabbage, kale, spinach, carrots, broccoli, and similar in a chopped salad style. Couldn't figure out why I never liked salads - and me a Californian wearing ribbons of shame. Turns out it was the crunchy water! Don't ask me what I think of avocados but you can have my allotment if you like those. Happy crunchy water salads to all who celebrate. ;)

    Great job Carter! My jalapeño plants are producing like crazy too! I am processing my celery today. Up next is peach salsa and probably another batch of cowboy candy. So many canning projects waiting in queue lol

    I like to blacken my tomatoes and peppers and onions under the broiler instead. It gives the salsa a smoky hint that I love.

    There's a young man in England with a popular RUclips channel called, Just Alex. He has millions of followers and I just watched him raise oyster mushrooms. If you enjoy eating mushrooms, you may want to watch his vlog on growing them. He also has a good video about raising bees, for honey.

    Our tomatoes will not ripen! Have loads of them but all green and rotting from too much rain I think. Suppose to be dry for over a week. Maybe they will ripen. The salsa looks great. 😊

    GARDEN TEA PARTY
    THIS FESTIVE party is a wonderful way to celebrate over lunch or afternoon tea! Outside a beautiful day. Incorporate bright flower colors and greens and as many from the garden foods as you can.
    Invitations: Enclose a small seed packet with the saying " Lets plant a party where fun is sure to blossom"
    Décor: Plants, flowers and greens from the garden
    Provide a covered shaded area to sit. Place brightly colored table cloths on the tables.
    Place a small plant at each place setting; insert a garden marker with Guest name on them in each plant.
    Make a centerpiece from flowers -if you don't have enough blooming in your garden use silk flowers or flowering plants.
    Create a butterfly garden in the tent.
    MENU
    CUCUMBER WATER AND LEMON WATER
    Iced TEAS
    TEA SANDWICHES: CHICKEN SALAD AND NECTARINES TEA SANDWICHES &
    CUCUMBER, GOAT CHEESE AND SPROUTS TEA SANDWICHES
    MINI LOBSTER ROLLS
    GARDEN SALAD
    CORN ON THE COB WITH BASIL BUTTER
    STRAWBERRY SHORTCAKES
    HERBAL TEA PARTY -- with hot herb teas and Iced Herb teas
    With so many excellent herbal teas available and it is easy to make your own --why not have your own an HERBAL TEA PARTY? Give your table a Herb Garden look with multiple of pots in different size of Fresh Herbs! You could even add a few white candles and some gardening or herb books. Make your first course rosemary scones, then serve tea sandwiches such as cream cheese and watercress on sourdough bread or chicken salad with tarragon on fresh-baked herb bread. You could also serve an her salad with tomatoes, parsley, and mint or opt for pasta with pesto sauce. Mint chocolate brownies or cinnamon ice cream would make a lovely dessert. And if you would like to give favors to your guest, consider (what else) seed packets or small pots of different herbs.
    CUCUMBER-MINT TEA SANDWICHES: Ingredients: 1 large cucumber, peeled and thinly sliced, salt and pepper to taste, 16 thin slices white bread, 1 stick unsalted butter, 16 fresh mint leaves, washed and torn or chopped. Directions: Sprinkle the cucumber with salt and pepper and set aside in a colander for 10 minutes so any excess liquid can drain. Pat dry with paper towel. Using cookie cutters rounds or spring cookie shapes, cut two 2-inch rounds from each slice of bread. Coat one side of each slice of bread with a very thin layer of butter. Place another round of bread on top buttered side down, and press sandwich together gently. Serve immediately or refrigerate wrapped in plastic wrap, until ready to serve or up to 3 hours.
    SMOKED SALMON AND CHIVE CREAM CHEESE TEA SANDWICHES: Ingredients: 8 OZ. SMOKED SALMON THINLY SLICED, 1/2 CUP CREAM CHEESE, 2 TBSP. FINELY CHOPPED CHIVES, 12 thin slices PUMPERNICKEL bread. Directions: Mix the cream cheese and chives in a small bowl until soft and creamy. Set aside. Using cookie cutters , cut two about 2-inch size of from each slice of bread. Using the same cookie cutter cut the slices of smoked salmon. Spread the cream cheese mixture onto 1'2 half of the bread shapes, then top with a piece of salmon. Place another shape of bread on top, and press sandwich together gently. Serve immediately or refrigerate wrapped in plastic wrap, until ready to serve or up to 3 hours.
    CUCUMBER, GOAT CHEESE AND SPROUT TEA SANDWICHES (makes 12) Ingredients: 1 medium cucumber, peeled and thinly sliced, salt and white pepper, 12 thin slices of seven-grain bread, ONE (6oz.) log of fresh goat cheese or goat spread, 1/2 cup alfalfa sprouts, fresh dill sprigs.
    Directions: Sprinkle the cucumber with the salt & pepper and set aside in a colander for 10 minutes so excess liquid can drain out. Pat dry with paper towel. Using a spring cookie cutter or round cookie cutter about 2 inches cut two matching shapes from each slice of bread. Lay cucumber on 12 rounds of bread, season with salt & pepper . Sprinkle sprouts on top of cucumber. Cut goat cheese into 12 thin slices and lay a top bread rounds sprinkle with sprouts and top with cucumber slices. Top with the 12 remaining rounds of bread. Press gently the sandwiches together. Garnish with a sprig of dill. If not serving immediately wrap in Handi-wrap and refrigerate up to 3 hours.
    SALMON WITH Thyme and Black Pepper Mustard Sauce: 3 tablespoons Dijon-style mustard1 teaspoon minced fresh thyme¼ teaspoon cracked black pepper. Combine mustard, fresh thyme, and cracked black pepper. Mix well; set aside. Can be made a day in advance. Before grilling or baking salmon use pastry rush to apply sauce cook to your desired doneness
    APPETIZERS: HERB DEVILED EGGS - Devil eggs served on a devil eggs tray if you have one. Ingredients: 12 hard boiled eggs, 1/2 cup mayonnaise, 1/4 cup sweet pickle relish, drained save brine to add a little back after mixing everything together (to flavor the eggs and make the right consistency) , 1 Tbsp. Mustard, 1 tsp. to 1 Tbsp. diced fine fresh herb of your choice ( I like chives or thyme or tarragon), 1 tsp. salt, 1/2 tsp. Worcestershire sauce, 1/4 tsp. pepper.
    Directions: Cut eggs in half, set egg whites aside. In bowl mash yolks and add all the other ingredients. Mix well. Stuff egg whites. Cover with Handi-wrap; Refrigerate until chilled and serve
    BLEND YOUR OWN TEA: Blending your own tea and then sampling it is one of life's little delights. So why not build an entire tea party around it? Buy half dozen tins of various teas; then give guests empty tea bags made of paper or muslin so they can take a spoonful of one tea, add a pinch of another, even a pinch of a third. While guest are enjoying their house-blended tea, serve chocolate chip scones along with turkey and Gouda cheese tea sandwiches. You might to brew a pot of your favorite blend of tea.
    PRESSED FLOWERS or Herbs: Buy or gather a bunch of fresh flowers or Herbs. Spread a pile of newspaper on the floor. With wax paper on top; Place flowers or Herbs on top, leaving a small space between each one. Then cover with wax paper & more newspaper. If your Mother agrees put the newspaper under your mattress, or cover them with a bunch of books. Change the newspaper every day, until no more moisture seeps into it from the flowers. this will take a week. Then arrange and glue the dried flowers onto a piece of paper. Put the dried flower picture into a frame. I have always used 2 sheets of wax paper with the flowers in between and piled books on op the sandwich of wax paper and flowers and wax paper. the nice thing about this you can use the wax paper just a bit smaller than the stack of books. I also of a dried flower press that I love for flowers and leaves! Or do what I do and use your flower press!
    EGG FINGERS: 4 hard boiled eggs chopped, 6 teaspoonfuls sweet pickles chopped fine, 4 teaspoonfuls mayonnaise, 4 slices firm white bread. Cut the crusts off the bread. Cut each piece into 4 strips. mash the chopped eggs and mayonnaise together. Stir in the chopped fine sweet pickle. Bread the mixture onto bread fingers. Serve 4
    CUCUMBER BOATS: 4 small cucumbers, 1 cup cottage cheese, 2 scallions, chopped fine, salt and pepper. Peel the cucumbers. Cut them in half lengthwise and scoop out the seeds. Mix the cottage cheese and scallions together well. Salt and pepper to taste. Fill the cucumbers with cottage cheese mixture. Serve 4
    FARMERS MARKET TEA: What could be better than a trip to your local farmers Market to pick up delicious farm-to-table produce for your afternoon tea? Think fresh baked rolls, scones, or crumpets for your first course served with jam. Down another aisle you're likely to find local cheeses, meats. and smoked fish for your tea sandwiches. Veggies are always abundant, too, so be sure to pick up radishes, cucumbers, and specialty lettuce to include un your sandwiches. It's always easy to find desserts at farmers markets---homemade pies, and cookies, even candies and cakes. Often local tea blenders sale their specialty blends at these markets as well.

      I used a Stevia blend. The syrup was nice and syrupy (if that's a word, lol), It was still to sweet for me so the next batch I'll cut the sugar down some more. But I still ate a lot all by myself, lol It will probably not be syrupy but the flavor should still be there..@@growandpreserve

      Yes, but you probably need stevia mixed with something else in order to get an effective mix with the pectin.

    Carter, I'm going to try your recipe for those scrumptious looking tomatoes. Every single year I chop my peppers and put them in the freezer in gallon freezer bags. I've also done it with chopped onions. Recipe ready food.

    I make little bags of pepper, onions and celery for my eggs. I put them in snack bags,then a gallon freezer bag. I have a coffee cup that says,do I look like ima morning person.

      Probably a very long time. The pH is so low that it should be fine for many months, if not longer.

    Hi Carter! I've been busy in my garden too. I'm growing potatoes and there's still some cushaw winter squash. And then there's my orchard. I'll start picking apples in mid September. Those apples have really exceeded my expectations this year. I have quite a bit of applesauce left over from last year. I was originally thinking that this year would be apple pie filling this year. I think that I'll be doing both now. Pray for my stamina!

    Just an opinion, I do have a rather well working "game-saver" here. It has no interest in sealing mylar, and is not advertised to do that either.

      It is. I had to walk around the corner to look. "Wingman GM2150." I should probably have a spare sealer bar, as I'm handy enough to replace one, I think.
      I recall it was bought locally from a company Christmas gift card... maybe 10 years ago.
      It will do the 12" width bags as well as 8" of course.
      If I had to name it for its most use, I would call it the chicken thigh saver.
      To address your concern, recovery time during a run was probably no more than 30 seconds. Maybe amping up to a 1 minute rest inside of a heavy session.
      I think that extra camo decal adds a lot of quality to the product . 🤣

    Wow! You had a busy week! As you know I'm in Calif, we spent yesterday shopping and hit Trader Joe's and Costco! I believe we are stocked up as the hurricane nears us! So hard to believe that this has never happened to Calif before, but by being here, I'm actually less worried about my family then if I were home! My son in law as the sump pump ready and we have solar with back up battery bank as well as gas generator! They are saying we will have high winds so power is expected to go out. As long as the wires do not cause fire, I'm pretty sure we will weather the storm! As we were shopping yesterday many in the stores were talking about how they did not know what to do or how to prepare as this just doesn't happen! It will be interesting, the broadcaster on one station commented that this was a manipulated weather event (Haarp) and that Lahaina was not natural either! Regardless, it will be what it is and it should basically have gone through our area by 10 pm tonight. I'll reach out to y'all as soon as possible. Keep up the canning! Makes me feel like I'm home just watching you!🥰

    Hi Carter. I tried to dehydrate some cherry/grape tomatoes and they're still rubbery after more than 24 hours. Any suggestions? I'm going to try that roasted tomato recipe. I fermented cherry tomatoes, garlic and basil. I love the recipes for the mini batches you come up with.

    Hey Carter! I'm behind on watching your vids, so I'm working backwards. This month has been a struggle... my favorite bunny died suddenly a couple weeks ago and I've just been trying to get through the days. She was the leader of the fluffle (yes, that's a real word used to describe a group of rabbits), and its changed the whole dynamic. The garden has gone wild (and so have the wretched white flies) and I'm just barely keeping up with the preservation. Anyway, I just haven't had it in me to document it for your other videos. However, I wanted to tell you I did the asian plum sauce and its *amazing*. Now I'm trying to decide if I have it in me to do this tomato recipe because it sounds incredible! My tomatoes have slowed down a bunch because of the heat, but I know I'll have another big harvest of slicers, and maybe enough romas if they cooperate and ripen at the same time. I somehow managed to kick out 3 types of salsa, rhubarb BBQ sauce, a ton of chicken bone broth, tzatziki sauce (frozen), and a ton of okra, peppers, and green beans have gone in the freezer and freeze dryer. (I make up freezer packs of peppers too, but I grab them more often for pizza or for a pasta dish with cardinal sauce I make). About 4 times a year I make up huge batches of egg burritos for the freezer, but I usually end up buying more peppers for that so I don't dip into my freezer stash. So, I need ideas for all the cucumbers piling up on the counter (other than pickles). Hubby just doesn't eat pickles and I'm more likely to grab pickled onions over traditional pickles. I'm hopefully about to be up to my eyeballs in sweet potatoes, which I am thrilled about. I planted a ton, and they have literally taken over the whole garden! We harvested our regular potatoes (5 varieties) and I'm disappointed in the yield, but its still enough to can up. I'll be following your rebel canning recipe this week, Lord willing and the creek don't rise. Oddly the russets did the best this year, and they're not supposed to do great in GA. The red potatoes were the lowest producers, totally backwards from last year when I had a bumper crop. 🤷‍♀ I'm stressing out because I haven't started seeds for the fall garden, and given the white fly issue, I'm wondering if I should even bother. I may just cover crop the whole garden with Timothy Grass for fodder for the buns. A friend who sells at the farmer's market pointed me in the direction of a specific type of beneficial nematode that works against white flies (from Arbico Organics), so maybe between getting the soil healthier and making it an unfriendly environment, hopefully I can hit the ground running in the spring without losing transplants to another white fly invasion. 🤞 I need to get out there and treat everything with neem oil but August has just been brutal... the weather, time constraints, heartbreak. If it were not for the sweet potatoes I'd take a weed torch to the whole garden and be done with it. 😔 Eager to work backwards and see what else I've missed.

      Karen, I’ve been thinking about you. I’m so sorry to hear about your bunny. Losing a pet is ridiculously hard. Don’t worry about trying to do it all right now. Whatever you can manage in terms of the garden and preservation is just right! Focusing on the health of the garden might be just the right thing for now. Another season with the frustration of the white flies sounds painful! Take care of yourself and keep me posted!

      @@growandpreserve You are just the sweetest! My hubby has been super supportive (even took her to Honor Thy Pet in Acworth to have her cremated and her urn personalized) and has never even implied she was "just a rabbit". He knew how loving she was... she would lick your face like a loyal dog that hasn't seen you for a week, insist on big hugs and snuggles, would follow you around the room, and if you sat down she would hop in your lap in a heartbeat. She was truly a dog trapped in a bunny body! My friends IRL don't get why I'm so distraught because they can't wrap their heads around how social she was. My heart is truly broken! I have to say that the process of canning and preserving has been a welcome distraction. As has spending some much needed time in the garden... even if much of that time has been spent cursing at bugs! (The hornworms and cut worms made their annual appearance during this time too. Ugh. ) Guess I ought to look for solutions to those pests too while getting the nematodes for the white flies. The friend who suggested them managed to banish squash vine borers for the past 3 years, which I didn't think was even possible here in the south! They did a specific nematode and also lacewing eggs. Wish us luck!

    Another great video! You have helped me move towards understanding canning so very much. I will keep plugging along and do the things I’m comfortable with while continuing to watch and learn. I’m so happy to see you share a Breakfast idea. Those little onion and pepper bags are a great idea. I keep them separately in gallon bags, but the little individual bags including both would be so so very convenient. Enjoy the new week💚👒

    I hope your SF cowboy candy works out! My husband doesn’t do sugar either. I stay away mostly from it too. I’ve been experimenting with jams and having good success.
