First of all, calling them French fries is very inaccurate. In France we say 'pommes frites' or simply 'frites', but not frites Françaises nor frites Belges !! The name french is originally an american idea, period, just like french dressing which doesn't exist in France, no French Vanilla since it mostly comes from Madagascar and other places but not France. How about French drain lmao, nothing as such in France. Only in America do we market a product as "french" when it doesn't have anything to do with France, just another way to make it more appealing.

Fresh water is used throughout the process to wash the starch away.
I visited a potato processing plant in North Dakota a few years back and was impressed with how they create these fries for many different clients.
