Cleanest way of deboning a leg/quarter I have seen - very professional! In Sweden they have started selling the deboned quarter as "chicken steak" and take twice the price compared to if you debone it yourself. Now I know how to do that in a very clean way. There are many other videos on RUclips that make it seem much harder to do. Thank you!
Seven years later your videos are still helping people. I have also watched some of your other videos and like this one they are all excellent. I had bone-in skin-on thighs to try this technique with and it works great. Cooked them in an air fryer, fantastic! Crispy outside, tender and juicy inside, and no bones. Best of all worlds. Thank you so much Chef Andros. The next two things I want to try are deboning the whole quarter, and your wonderful technique for breaking down a chicken. No wastage!

what has more meat/bone ratio per weight, leg or thigh? I'm wondering if I buy leg or thigh and debone myself what will net me the most meat per pound. I never see leg and thigh portions together any more. thanks, nice demonstration.
Andros I realized I had not watched the entire video so I just now did so. Delicious looking kabobs!! Neat idea about cutting the outside of the tomato for the skewer. My favorite line, “The knife does not make the chef.” Awesome!!
Thanks, To remove the skin of a Whole chicken, Just undress it the same way you are removing your T shirt or trousers, or after filleting in four parts, pull the skin of each quarter separately. Useful to see my other videos on chicken.

@@harmandros Thank you, and yes I understand - but why not. Considering the minimal cuts you made, and only using the tip of the knife, I was hoping to understand if there was a particular reason to avoid using one of my several chefs knife. (I actually don’t own a boning knife. 😕)

Α Chef's knife is good to cut parsley not debone a chicken.
