i think superman is most interesting/likeable when he isnt all grimdark "i am a god" and is just a dorky dad who loves his wife, and whose main issue is trying to reign in his powers and not kill everyone

Yeah, the thing is that Superman stories are generally not really about how powerful he is, its more about how he reacts to the world around him in the context of someone who has that power. He's actually a really good character when they're focusing on the CHARACTER, not the powers. Which is also why people compare him to Goku, the fact that he's powerful isn't really the point or the real appeal of the character.
I saw a twitter thread some time ago with a lot of different Superman panels and that got me to understand the appeal of the character. He's a genuinely nice person despite his insane power. He cares and has love for his fellow man. He'd halt a bank robbery and then immediately go to convince someone to not jump off a building (which has happened at least twice to my knowledge)

Here's the thing, I don't like Superman at all, but I'll be the first to say he should never be grimdark. He SHOULD be the boy scout, so actual grimdark characters have a foil. If al characters are grimdark then none are.
