    In Russia, there are several peoples of which there is an Eastern European cuisine originating from the Russian ethnicity and therefore a European cuisine. There are other peoples like the Tatars who have a cuisine influenced more by Asia and also by Europe. There is Buryat cuisine which is purely Asian. There is Chechen cuisine which is close to Georgian cuisine and close to Middle Eastern cuisine.

    But Borscht is Ukrainian food, pelmini is Chinese food, pirozhki is bashkir food, shashlyk is Caucasian food

      you are mistaken, because borsch is not a synonym - Ukrainian food, it's just a recipe called "borsch Ukrainian", because there is also "borsch Belarusian", borsch Polish, borsch Siberian, "Moscow borsch"..., etc. borsch is an old Russian soup that appeared in Russia at a time when there was no Ukrainian state, and all ukrainian called Russians in all world. In fact, the recipe of borscht is a variant of a multicomponent thick Old Russian soup, which is soup Shchi + beetroot which colored this soup in the characteristic red color of Borscht. That is, Borscht is literally red Shchi with beetroot. Beetroot is the only difference between the recipe of soup Borscht (beetroot) vs the Shchi (beetroot is absent).
