Great stuff John. I haven’t seen paste like that here in Canada (although didn’t know to look for it either). Just looked up how to make it and it seems simple enough. We like curries and I don’t make them enough. So thanks for the inspiration. I like peas in them but don’t think I’ve ever put mushrooms in. Will give that a try. Class ! What brand of curry paste did you use John? I think if you invested in a silicone spatula- you’d love it- leaves no sauce behind when transferring sauces 😂
Look for products sold to restaurant kitchens. The home spatulas in common shops have rubbish handles and hold strange odors after washing. My favorite is one with a simple wire loop handle Linden from Sweden, it has a finer edge. Vollrath are good for heavy duty use(stiff bread dough and such.) with extra thick nylon handles, but the blade is also rather chunky so it doesn't easily conform to tight shapes like the Linden. Both are suitable for a pan of curry or pasta. Rubbermaid commercial are like a lighter Vollrath. I haven't tested the other commercial silicone spatula brands.
Silicone carrying odor/flavor after washing is due to fillers. If you bend a "silicone" spatula and the convex crease turns white, it has fillers. Quicker it turns, the more filler. They like to throw silica and nylon in there (and whatever else sweeps off the floor).
That looks tasty, but I think cubed Spam in with the onions and 'shrooms would give more color to the dish. It's important to eat a variety of colors. Best wishes to you, Debs, and the 'Fam from North Carolina, US.

Should weld up some jig to cut the onions, would speed production up and could be dual use for the mushrooms.
Compressed air does a good job removing the onion wrapper as well.
No need for a spring pass on the mushrooms eh John!🤣
