SOCHNIKI with cottage cheese 🔸🔸🔸 Dough: Flour - 320 g Butter - 150 g Egg - 1 piece (+ 1 white) Sugar - 70 g Baking powder - 1 tsp Salt - 1/3 tsp 🔸🔸🔸 Filling: Cottage cheese - 300 g Sugar - 60-70 g Egg - 1 pc. Flour (starch) - 30-50 g Sour cream/yogurt - 30 g Vanilla sugar - 1 tsp 🔸🔸🔸 And also: 1 yolk + 1 tbsp milk (for greasing baked goods) 🔸🔸🔸 1. Mix soft butter, sugar, salt. Add 1 egg and 1 white. After mixing, add about half the flour, baking powder and begin kneading the dough, gradually adding the remaining flour. Wrap the soft and pliable dough in a plastic bag and put it in the refrigerator for 40-60 minutes. 2. For the filling, mix cottage cheese, sugar, vanilla sugar, egg, sour cream (yogurt) and flour (starch). 3. Divide the chilled dough into 9-10 equal pieces, giving each one a kolobok shape. Roll out the koloboks into ovals 4-5 mm thick. Place the filling on one half and cover with the other half. 4. Grease the sochniki with a mixture of 1 yolk and 1 tbsp milk (water) and bake at 200°C (392°F) for 20-25 minutes, until a beautiful golden color. Sprinkle the cooled sochniki with powdered sugar.
