Thankfully you can purchase grated coconut (unsweetened) and you could also use coconut water or coconut milk to reconstitute or add moisture to your keleguen if you need it. Btw, we also make grilled eggplant kelaguen too. You could also serve it with warm corn tortillas or corn chips. You did good brother, respect👊👊
Chicken is thoroughly cooked. Basic seasoning and grilled. Best with charcoal or wood. During ww2 it was partly cooked since they couldn't make big fires and risk being located by Japanese forces. Lemon China cooked the chicken the rest of the way. People back then had stronger stomachs tho. Get a grater or buy cheddar coconut. I like to add coconut last. Especially if you're serving later. Coconut makes it spoil faster
@@Dadwithapan It's a piece of metal shaped like a flat spoon and groves to form teeth like to grate the coconut hope I explained that right if not google it "sorry".

You definitely need a kamyo. I've tried making kelaguen with coconut blended like this and the texture is not right.

My family is from Guam - I'm 3rd generation but the family name is Leon Guerrero
I'm gonna have to try it with added white onion. Instead of thai peppers I use habeneros
