- Good morning and happy new year everyone! Today I offer you a simple dessert made with almonds (gluten-free), egg whites and sugar, a single flavored base in 4 different flavors, Pistachio, Coffee, Lemon and Orange! One better than the other!
Almond desserts are much sweeter, in the original recipe they go for the same weight of almonds and the same weight of sugar but I have almost halved it, even though it is sweet. I called them PIZZICOTTI because the shape is given by pinching with the fingers, easy and very soft ...

Since I was never able to see the English subtitles, I translated from Italian:
we add 3 (whites), leaving one behind, if we realize that we need it, we add it
we can also add the fourth
½ vial (a teaspoon) almond flavor)
it must be soft but consistent
it can be left natural or flavored by dividing it into 4 parts
1 teaspoon soluble coffee + 1 teaspoon water + 1 teaspoon sugar
in one we add the coffee
in another, we grate 1 lemon
in another grate 1 orange
in the last 1 teaspoon pistachio paste
in a bowl, we put icing sugar
form balls of about 20 g we help by wetting our hands
and we roll them in sugar
we pinch it on one side and the other
on those with pistachio, we put some pistachios
on those with lemon, we put almonds.
on the orange ones we put some sour cherries
we put coffee beans on those with coffee
we bake a 170 C ventilated oven, 180 C static oven about 10-12 minutes
they must still be soft
there is an almond scent throughout the house
they are basically almond desserts
very soft and delicious

I can't tell you how eager I am to try your recipe. Forty-three years ago I bought something exquisitely delicious at a Danish bakery in Solvang, California, which was made with almond paste or marzipan. The dough had been piped into about a two-inch swirl with a peak at the top, baked and then dipped into chocolate. Years later, when I returned, I was saddened to learn that the bakery had been sold and there was nothing like it anymore. I've been trying for years to figure out how it had been made but always failed. When I saw your pizzicotti, I realized how close it must be to what I had so long ago. Thank you for the inspiration. I'm going to try again using your recipe. At the Danish bakery they were called macaroons, which of course means something quite different from how we use the word. Thanks very much.
